Book excerpt: Excerpt from The Chemistry of Cattle Feeding and Dairying In the present volume the aim is to develop and explain those fundamental principles which are the basis of all effective control in farming operations rather than to prescribe rules for particular cases. The more important conclusions are, however, brought to the test of comparison with rations actually used by farmers. Numerous examples of the latter are described and criticised in the light of the principles from the dual point of view of efficiency and pecuniary economy. It is assumed that the reader is familiar with the rudiments of inorganic and organic chemistry, but not necessarily with the more advanced work on proteins, carbohydrates, etc. This is given in condensed form in Part I. together with some constitutional formulae and other matter occasionally required for reference. It is possible, therefore, to avoid digression in the remaining sections which deal with the requirements of the animals, the feeding stuffs and the chemistry of dairying, respectively. The last-mentioned subject cannot well be separated either from the preliminary matter above referred to or from the question of milk production which, of course, is dealt with in Part II. The data are derived partly from the German and partly from American experiments, and the interpretation of them is based largely upon the Rothamsted investigations. The feeding standards of Wolff and Kellner's system of starch equivalents are examined; but an attempt is made to break away, more or less completely, from both, and from the tyranny of the rule of three in which they are involved. It is now generally acknowledged that the requirements of animals are not proportional to the mass. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Book excerpt: Excerpt from The Chemistry of Dairying: An Outline of the Chemical and Allied Changes Which Take Place in Milk, and in the Manufacture of Butter and Cheese; And the Rational Feeding of Dairy Stock Milk is a very complex material. It is, in fact, one of the most complex of the animal fluids. Milk is com posed of a number of solid substances dissolved and sus pended in water. The substances in solution are casein, ash, sugar, and albumin. These substances, together with the water in which they are dissolved constitute the milk serum. The fat in the milk is not dissolved, but is suspended in the milk serum. The fat is present in the form of globules, like little rubber balls. Book excerpt: Excerpt from Dairy Chemistry This work is the outgrowth of a course of lectures given by the author for a number of years to the students of the Agricultural Department of the University of Minnesota. During recent years material progress has been made in dairying, and in writing this book it has been the aim briefly to incorporate the results of the more important investigations on the subject. In the preparation of the work extensive use has been made of the bulletins and reports of the Agricultural Experiment Stations of the United States and of other works on the subject. It is the aim to present in as concise a form as possible the principal changes that take place in the handling of milk and in its manufacture into butter and cheese. While our present knowledge of some phases of the subject is incomplete, there are many facts that are known and have been found very useful as an aid in the production of dairy products of the highest sanitary and market value. This is an OCR edition with typos. Excerpt from book: CHAPTER III THE ELEMENTARY COMPOSITION OF FEEDS In a consideration of the feeding problem, little attention is, as a rule, given to the individual elements which, in combination, form the complex compounds of the plant and animal tissues; yet the science of chemistry shows that all substances are ultimately derived from the simple chemical elements. The feeding stuffs used for farm animals are generally vegetable products, though a few animal products, such as tankage and skim milk, are utilized. These feeding stuffs consist of complex compounds, and a knowledge of the source of these compounds is of value. The animal elaborates the constituents of its body from the compounds existing in plants or animal products, but the plants used as sources of feeds must elaborate these compounds from simpler substances. As will be noted later, the carbohydrates, fats, proteins and ash are the main constituents derived by the animal from the plant products it consumes; the first problem, therefore, is to locate the source from which the plant obtains these substances. The plant makes them from the elements and from some simpler compounds elaborated from the elements. A very large number of elements are found in plants, in the form of compounds, but only a few of them need be considered, as all of them are not essential for animal life. CARBON The element, carbon, which is the main constituent of coal, and in the practically pure state forms such widely differentsubstances as diamonds and lampblack, forms about 50 per cent of the dry matter of plants and animals. It occurs in the air as a constituent of the gas, carbon dioxide, which when present in appreciable amounts in buildings may lead to difficulties, as it is poisonous to animals. Green plants have the power of absorbing t...
