Dans le monde, son incidence ne cesse d'augmenter. Les symptômes de la maladie étant hétérogènes, les retards de diagnostic sont fréquents. Afin de permettre un diagnostic précoce, une équipe médicale pluridisciplinaire est nécessaire. Un lien significatif entre certaines manifestations orales et la maladie a été démontré, notamment les défauts amélaires et les stomatites aphteuses récurrentes. Le chirurgien-dentiste peut donc être l'initiateur de recherches plus approfondies. La démarche diagnostique auprès de l'enfant a été simplifiée, la biopsie n'est plus systématique ; les recherches sérologiques peuvent dans la plupart des cas suffire à confirmer le diagnostic. Le seul traitement à ce jour est l'éviction totale du gluten des habitudes alimentaires. Traitement contraignant, mais qui s'est avéré efficace sur la majorité des symptômes. Le ciblage de la population à risque et la reconnaissance des premiers signes de la maladie amélioreraient la qualité de vie des patients et préviendraient ses complications.

L’amélioration des connaissances épidémiologiques de la maladie, la démonstration de la relation entre maladie coeliaque et certains groupes HLA, et l’identification récente de la transglutaminase comme autoantigène, ont permis d’émettre de nouvelles hypothèses sur le mécanisme physiopathologique de la maladie, et de proposer de nouveaux outils performants pour le diagnostic. Le traitement de la maladie repose sur le régime sans gluten, à vie. C’est le seul traitement efficace et actuellement disponible de la maladie coeliaque. De par sa position d’interlocuteur vis-à-vis du patient, le pharmacien doit savoir conseiller le patient coeliaque sur le suivi et l’observance de son régime.
