Book excerpt: Salt has been an essential dining element since the invention of the kitchen table. But today, specialty salts come in a vast variety of forms and flavors. Smokey salts, salts infused with clay or charcoal, herby and spicy salts, salt with extra umami or a hint of sugar are being added to many recipes, to layer more flavor, and not simply to enhance the flavors already there. It’s a feast for the tongue, and colorful salts also add visual interest to dishes, and the varying textures add crunch. But how do you decide which to buy—and how do you get the most out of them once you’ve brought them back home to your kitchen? Salt will show you how to choose and how use them in simple, delicious recipes for every meal of the day. You will learn how to cook, cure, and bake with them. Plus, you’ll find a market guide that describes the different types of specialty and infused salts, discover ways to cook with salt blocks, and even how to organize your own salt tasting at home. More than 100 mouthwatering recipes—plus nearly 50 varieties of infused salts—with beautiful, full-color photography will help you transform this classic, humble ingredient into a star seasoning.

Available in PDF, EPUB and Kindle. Book excerpt: When I was in 5th grade and went to the school social worker for depression. The social worker pointed out to me a little nick-knack on her desk that said "When Life Gives You Lemons, Make Lemonade". As if saying, I just needed to make the best of a bad situation. Sounded like a load of crap to me when I was in 5th grade, and still sounds like a load of crap today. When you are given Tequila at a bar, you can ask the bartender for training wheels (lemon and salt). If you lick the salt, squeeze a drop of lemon in your mouth, and then take a shot of Tequila a funny thing happens. The Tequila isn't as harsh as it was. Doesn't burn when it goes down your throat, or upset your stomach. Being disabled can be like a glass of Tequila. It is painful both sometimes emotionally and physically. However if you can find something from life that you enjoy. Focus on that, rather than the negative aspects of your life. You can begin to enjoy life too.

Available in PDF, EPUB and Kindle. Book excerpt: “This fascinating, well-written book explores how tequila has come to symbolize what it means to be Mexican . . . A must read.” —Choice ¡Tequila! Distilling the Spirit of Mexico traces how and why tequila became Mexico’s national drink and symbol. Starting in Mexico’s colonial era and tracing the drink’s rise through the present day, Marie Sarita Gaytán reveals the formative roles played by some unlikely characters—such as the revolutionary Pancho Villa, who was himself a teetotaler. She also shows how tequila’s cultural status was shaped by US-Mexican relations, the tourism industry, shifting gender roles, technology, regulation, film, music, and literature. Like all stories about national symbols, the rise of tequila forms a complicated, unexpected, and poignant tale. By unraveling its inner workings, Gaytán encourages us to think critically about national symbols more generally—especially the ways they both reveal and conceal—to tell a story about a place, a culture, and a people. In many ways, the story of tequila is the story of Mexico.

Book excerpt: California-cool grilling wisdom from one of the most renowned chefs in Los Angeles. Josiah Citrin is one of the biggest names in the L.A. food world and his restaurant, Mélisse, is a temple for fine dining. But his hot new restaurant, Charcoal Venice, is devoted to the kind of cooking he does at home for his friends and family--backyard cookouts where a pile of coals and seasonal ingredients are all a home cook needs to create an unforgettable meal. In Charcoal, Citrin presents completely fresh ways to cook with fire and charcoal, not only grilling over the coals, but cooking inside them and finding inventive methods for searing and smoking. Whether Citrin's grilling barbecue classics like J1-Marinated Skirt Steak and Salt-Baked Whole Maine Lobster or West Coast-inspired vegetable sides like his signature Cabbage Baked in Embers, charcoal is the dynamic center of this cookbook. Unlike other grilling books, vegetables get equal billing with meat. For Citrin, the color, texture, and flavors of vegetables are endlessly inspiring. With almost 100 recipes for savory main dishes and sides, as well as desserts and even cocktails, Charcoal shows that the satisfaction of smoky flavor and a good char knows no bounds. It is a celebration of the universal human craving to gather together and cook over a live fire.
