These agents include antioxidants used in materials, food antioxidants, physiological antioxidants, and antioxienzymes (SOD, glutathione peroxidase, and catalases). The corresponding complexes are often less sensitive to air and moisture, and have proven remarkably resistant to oxidation. This book shows how N-heterocyclic carbenes can be useful in various fields of chemistry and not merely laboratory curiosities or simple phosphine mimics. However, an adequate description of this strongly expanding area would have exceeded the allocated space by much, and this section had to be omitted.
