Available in PDF, EPUB and Kindle. Book excerpt: Fresh? Juice? Paste? Canned? Stewed? Diced? Pureed? Sun Dried? Salsa? Sauce? Ketchup? Rare is the cuisine that does not make use of the tomato in some way, shape, or form, and the resulting culinary popularity of the tomato has led to its proliferation in fields and farms around the world. While some may still argue whether the tomato is a fruit or a vegetable, few would argue that tomato crops are highly lucrative, attractive to farmers in both developing and developed countries and on large and small farms alike. In fact, for those crops with significant global volume and market share, tomatoes are the highest valued among those crops that lack an affiliation to mind-altering drugs. But, the tomato can be a persnickety critter. The tomato doesn’t like it too hot, too chilly, too wet, too dry, or too fertile. Many don’t ripen at the same time. Most are easily bruised. And, the selective breeding that has yielded a larger, more attractive, and deep red tomato has also mercilessly drained much of the taste and flavor from a once sweet and delectable fruit. Enter the world of sensors and modern sensing technology. The Internet of Things (IOT), when using well chosen, well networked, and well aggregated sensors, has shown tremendous potential to support precision agriculture, providing a more detailed picture of crops than was previously possible using conventional crop monitoring techniques. But, the stringent resources and tight profit margins that are a fact of life among many tomato growing operations, large and small, mean that sensor technologies must be chosen and used carefully. There is no doubt that each sensor must earn its keep in producing the perfect tomato. With that in mind, this book explores key opportunities to marry the potential of sensors that are networked within the IOT to the needs of tomato production in ways that are economically fruitful, technologically robust, and sustainable overall.

Optimizing yields for tomato crops requires careful attention to how and when to harvest both in the context of time-to-market and end use. The Internet of Things (IOT), when using distributed and networked sensors, has shown tremendous potential to support precision agriculture, providing a finer resolution, more detailed picture of crops that was not previously possible using conventional crop monitoring techniques. This book marries the potential of the Internet of Sensors to the needs of tomato farming, in ways that are economically fruitful, technologically robust, and environmentally sustainable.

Book excerpt: The tomato. As savory as any vegetable, as sweet as its fellow fruits, the seeded succulent inspires a cult–like devotion from food lovers on all continents. The people of Ohio love the tomato so much they made tomato juice the official state beverage. An annual food festival in Spain draws thousands of participants in a 100–ton tomato fight. The inimitable, versatile tomato has conquered the cuisines of Spain and Italy, and in America, it is our most popular garden vegetable. Journalist Arthur Allen understands the spell of the tomato and is your guide in telling its dramatic story. He begins by describing in mouthwatering detail the wonder of a truly delicious tomato, then introduces the man who prospected for wild tomato genes in South America and made them available to tomato breeders. He tells the baleful story of enslaved Mexican Indians in the Florida tomato fields, the conquest of the canning tomato by the Chinese Army, and the struggle of Italian tomato producers to maintain a way of life. Allen combines reportage, archival research, and innumerable anecdotes in a lively narrative that, through the lens of today's global market, tells a story that will resonate from greenhouse to dinner table.

Book excerpt: A village in Tuscany is the setting for this joyous debut—a novel that defies all our expectations as it puts a fresh, clever, captivating spin on the age-old tale of forbidden love. Rich in literary delights, filled with spectacular wordplay, and rife with the bawdy humor of Shakespeare’s comedies, Tomato Rhapsody is the almost-true tale of how the tomato came to Italy—at once a brilliantly inventive fable of love, lust, and longing, and a dazzling feast for the imagination. This is a story born from love—a forbidden love—between Davido, an Ebreo tomato farmer, and Mari, a beautiful Catholic girl.…But it’s not only Davido and Mari who have secrets of the heart. Everyone around them yearns for something—from Davido’s grandfather, who tenderly cultivates the tomato plant he stole on his voyages with Columbus, to Mari’s villainous stepfather, whose eye is trained on his stepdaughter’s virginity and his neighbor’s land. Caught in the midst of these passions and machinations is a village full of eccentrics who speak in rhyme, celebrate the Feast of the Drunken Saint, and live a life untouched by the passage of time. The schemes and dreams of these men and women are about to change as what is forbidden becomes too delicious to resist. Tradition, religion, and good taste collide unforgettably in a story about the courage to pursue love and tomato sauce at all costs.

This book was released on 2014-11-03 with total page 687 pages. Available in PDF, EPUB and Kindle. Book excerpt: 2015 IACP Award Winner, Best Single Subject Cookbook A householder's guide to canning through the seasons. In Mrs. Wheelbarrow's Practical Pantry, food preserving expert Cathy Barrow presents a beautiful collection of essential preserving techniques for turning the fleeting abundance of the farmers’ market into a well-stocked pantry full of canned fruits and vegetables, jams, stocks, soups, and more. As Cathy writes in her introduction, “A walk through the weekend farmers’ market is a chance not only to shop for the week ahead but also to plan for the winter months.” From the strawberries and blueberries of late spring to the peaches, tomatoes, and butter beans of early fall, Mrs. Wheelbarrow’s Practical Pantry shows you how to create a fresh, delectable, and lasting pantry—a grocery store in your own home. Beyond the core techniques of water-bath canning, advanced techniques for pressure canning, salt-curing meats and fish, smoking, and even air-curing pancetta are broken down into easy-to-digest, confidence-building instructions. Under Cathy’s affable direction, you’ll discover that homemade cream cheese and Camembert are within the grasp of the weekday cook—and the same goes for smoked salmon, home canned black beans, and preserved and cured duck confit. In addition to canning techniques, Practical Pantry includes 36 bonus recipes using what’s been preserved: rugelach filled with apricot preserves, tomato soup from canned crushed tomatoes, arugula and bresaola salad with Parmigiano-Reggiano and hazelnuts, brined pork chops with garlicky bok choy. Tips for choosing the best produce at the right time of season and finding the right equipment for your canning and cooking needs—along with troubleshooting tips to ensure safe preserving—will keep your kitchen vibrant from spring to fall. Whether your food comes by the crate, the bushel, or the canvas bag, just a few of Cathy’s recipes are enough to furnish your own practical pantry, one that will provide nourishment and delight all year round. Canning and preserving is not just about the convenience of a pantry filled with peaches, dill pickles, and currant jelly, nor is it the simple joy of making a meal from the jars on the shelf—creating a practical pantry is about cultivating a thoughtful connection with your local community, about knowing exactly where your food comes from and what it can become.
