Book excerpt: Food Storage Stability addresses one of the foremost problems faced by food processors - how to stabilize food once it is harvested. Using a holistic approach, the book discusses the changes responsible for food quality deterioration and considers strategies for minimizing or eliminating these degradative changes. Topics include: consumer perceptions and preferences, cellular changes, conversion of major constituents to more stable products, the effect of color and texture, packaging issues, and practical strategies for storing foods frozen, chilled, or at ambient temperature. Food Storage Stability is the only treatment of this subject that covers the diverse factors that influence quality retention in foods and integrates basic concepts in storage stability with practical applications. Food scientists and technologists concerned with changes in food quality are interested in ensuring that safe and appealing food products reach consumers - this is the book that will assist them with that important goal.

Available in PDF, EPUB and Kindle. Book excerpt: The purpose of this new edition is to bring to readers in dental, speech, and oral myofunctional professions the most up-to-date awareness of what has happened, and is happening, in the field of orofacial myology throughout the world. In this volume, the information is intended for basic and intermediate levels. This expanded text also includes contributions from four continents and therapy suggestions from ten additional clinicians. Included are updated and expanded chapters on the scope of myofuntional disorders, history of myofunctional problems and treatment regimes, anatomy, physiology, speech, dentition, orthodontics, and diagnostic and treatment procedures. The authors' intent is to provide a wide scope of information within a framework of interdisciplinary interactions for those professionals whose work impacts individuals with myofunctional disorders. The considerable material on treatment includes theory, principles, approaches, instrumentation, and specific exercises and assignments. Considerable insights and principles from orthodontics are included throughout the text. New in this volume are explanations of the importance of the dental freeway spaces as a consideration in diagnosis and treatment. The authors recommend this text as a resource for learning about the background and state-of-the-art in the United States and internationally regarding the theory and practice of orofacial myology. The book will be of special interest to myofunctional clinicians, speech-language pathologists, dentists, and other interested professionals.

Since most of our research efforts have been concentrated on fundamental neural mechanisms, the book emphasizes basic research in this area. However, our back grounds in clinical dentistry have always made us acutely aware of the relevance of these findings to clinical problems in dentistry and medicine, and such correlations are emphasized throughout the text. The term, "oral and facial function," will here include the sensory and motor neural mechanisms of the face, mouth, pharynx, and larynx. Detailed discussions of nasal function, olfaction, and speech mechanisms have been omitted; these areas would encompass a book in themselves. A chapter on the subject of taste presents a brief overview in relation to other chapters in the book and clinical significance. We have not intended each chapter to be a review of the literature in a given area but have chosen to emphasize significant findings for total function of the area. References are limited to review articles whenever possible and the reader is invited to search such reviews for original articles of interest. Where such reviews are not available, original articles are usually referenced so that the book provides a path to source material for those so inclined. Some of the chapters on special areas of interest such as teeth, periodontium, and jaw reflexes, however, are extensively referenced because of their unique relationship to the subject matter of the book.

Available in PDF, EPUB and Kindle. Book excerpt: The waterproof sensory sheet covering the mammalian body has a rich afferent innervation which provides an abundance of complex information for use by the central nervous system often in conjunction with information from receptors in the joints. This book is an attempt to provide a systematic account of the way in which this somatosensory system works. The properties of the peripheral receptors have been debated in scientific terms for about a century and the resolu tion of the conflict in favour of the existence of 'specific' receptors for mechanical, thermal and noxious stimuli is reported and discussed in the opening chapters of the book. An awareness of this specificity has forced a re-consideration of the ways in which the central nervous system de-codes the information which is showered upon it. Advances in knowledge of the fine structure of the central nervous system have raised functional questions about the operation and organisation of the sensory systems in the spinal cord and brain. Fresh insight into the morphological complexity of the dorsal horn and higher levels of the nervous system gives the physiologist a clearer idea of the units with which he works. Progress has been made in understanding the function of sensory relay nuclei in general and indivi dual tracts in particular and is fully decomented.

Book excerpt: Speech and Language: Volume 6, Advances in Basic Research and Practice is a collection of papers that discusses pathology, theories, and clinical issues related to language and speech. Some papers describe auditory discrimination and intervention techniques for articulatory defects, assessment of auditory disorders, phonological systems of deaf speakers, as well as speech and language characteristics of aging persons. Other papers discuss issues in language and cognitive assessment of black children, distortions of the supralaryngeal vocal tract, the structure of the human tongue, transformation of the acoustic signal into speech, and methods to estimate glottal volume velocity waveform properties. One paper suggests guidelines that investigators should be aware of before giving any speech discriminating tests. These guidelines include the following: use of age appropriate tests, use of culturally unbiased tests, adaption of intrapersonal testing procedures, and utilization of recorded stimulus presentation. Another paper reviews auditory processing deficits associated with brain damage and the considerations applicable to the assessment of such disorders. It also suggests treatment planning. One paper concludes that the phonological structure of a fluent speech requires that the listener employ higher level sources of knowledge while making phonetic decisions. Linguists, speech pathologists., psychologists, speech therapists, neurologists, neuropsychologists, and neurolinguists will find the collection highly relevant.
