Comment s’articulent les rapports de forces entre serveur, cuisinier et barman par l’ensemble d’interactions qui s’inscrivent dans ce que je nomme « le triangle de service ». Dans un second temps, partant des interactions entre serveur, cuisinier, barman, j'aborde la manière dont les individus se nouent d’amitiés, développent une solidarité que je nomme « intéressée » loin de la solidarité organique et mécanique vue par Durkheim. Le dernier chapitre de l’ouvrage est une analyse comportementale d’un individu. À travers cet acteur, nous verrons que le métier de restaurateur permet un embourgeoisement d’une certaine frange de la population tout en la paupérisant, ce qui est un paradoxe. Paradoxe que nous expliquons dans l’analyse du comportement de l’acteur observé. À PROPOS DE L'AUTEUR Aurélien Pauwels - Né à Yaoundé (Cameroun), diplômé d’une licence, Master 1, Master 2 en sociologie à la faculté de lettres et des sciences humaines de Limoges, je suis salarié à temps partiel dans une entreprise de diffusion de prospectus depuis 2011, entreprise dans laquelle je distribue les prospectus et, fait de la manutention. Avant d’entrer à l’université, j’ai effectué une année de mise à niveau en hôtellerie restauration; cette année de mise à niveau m’a permis d’obtenir un stage de quatre mois au Golbert-hotel de Châteauroux. Puis, une fois à l’université, j’ai passé deux saisons de job d’été à Annecy comme serveur.
