Food had to be simple to prepare, especially when the kitchen was rolling down the tracks at speeds of up to 80mph. The Southern Railway served the South, and the meals in the dining cars reflected the good, wholesome food from that area. You won't find exotic quiche's in this book, but there are classics such as Fried Chicken Southern Style with Cream Gravy and Southern's Shrimp Creole. There was an added bonus to dinner in the diner; the ever-changing American landscape outside the window. The heyday of the passenger train may be gone, but the food that helped make getting there half the fun, is still available and easy to make for the average home cook. I have been a lifelong railroad enthusiast as well as an accomplished amateur chef. I combined my loves in the publication of "The Southern Railway Dining Car Cookbook: A Historic Reference." The research for this book started in 1989 and a first edition was self published in 1990. Thanks to the research capabilities of the internet, I was able to find additional recipes from archives in areas served by the Southern Railway and the result is this second edition.

Book excerpt: Did you know that the history of powdered gelatin is tied to the invention of the steam locomotive? That bell peppers were called "mangos" in early America? That until the early 1900s, tomatoes were avoided unless a handful was needed to kill a werewolf? From Rivets and Rails not only offers recipes from a boarding house linked with the New York Central and Hudson River Railroad lines, but also gives tidbits of information related to early American cooking and railroad history. Based on the cookery journal of Elizabeth Shade Kennedy, a woman who became a single parent to five boys following the unexpected death of her railroad engineer husband, Recipes of a Railroad Boarding House Cookbook offers a glimpse into early kitchens during one of the most expansive times in American history.

Available in PDF, EPUB and Kindle. Book excerpt: In roughly one hundred years – from the 1870s to the 1970s – dining on trains began, soared to great heights, and then fell to earth. The founders of the first railroad companies cared more about hauling freight than feeding passengers. The only food available on trains in the mid-nineteenth century was whatever passengers brought aboard in their lunch baskets or managed to pick up at a brief station stop. It was hardly fine dining. Seeing the business possibilities in offering long-distance passengers comforts such as beds, toilets, and meals, George Pullman and other pioneering railroaders like Georges Nagelmackers of Orient Express fame, transformed rail travel. Fine dining and wines became the norm for elite railroad travelers by the turn of the twentieth century. The foods served on railroads – from consommé to turbot to soufflé, always accompanied by champagne - equaled that of the finest restaurants, hotels, and steamships. After World War II, as airline travel and automobiles became the preferred modes of travel, elegance gave way to economy. Canned and frozen foods, self-service, and quick meals and snacks became the norm. By the 1970s, the golden era of railroad dining had come grinding to a halt. Food on the Rails traces the rise and fall of food on the rails from its rocky start to its glory days to its sad demise. Looking at the foods, the service, the rail station restaurants, the menus, they dining accommodations and more, Jeri Quinzio brings to life the history of cuisine and dining in railroad cars from the early days through today.

This book was released on 2016-11-15 with total page 184 pages. Available in PDF, EPUB and Kindle. Book excerpt: A meal in the dining car was often the highlight of any train trip. Gordon Mooneyhan, a lifelong railroad enthusiast, as well as an accomplished amateur chef, has captured the essence of those bygone days in the Atlantic Coast Line Dining Car Cookbook. The "Coast Line" was one of the railroads that actually maintained a cookbook. Still, the copies that were in archives were not complete. Gordon was able to search libraries and other sources to find many of the missing recipes, although some, such as "Coast Line Dressing" have been lost to time. In those instances, Gordon has "recreated" the recipes, based on descriptions of the original, and they are noted as such in the book. Also included is a history of "Hitching Post Foods." Hitching Post Dressing and Mint Syrup were used on the ACL dining cars, and recipes for those items have been recreated here. Take a step back in time and enjoy meals from an era when life was simpler, less hectic, and when getting there was half the fun!
