Available in PDF, EPUB and Kindle.

Available in PDF, EPUB and Kindle. Book excerpt: This volume contributes to the return to nature movement that is very much in vogue in contemporary European societies, by examining the place of food and eating in the "rewilding" process. It is divided into three parts, each of which consists of conversations between social scientists, with fieldwork collected from across Denmark, Finland, France, Italy, Norway and Switzerland. The first part focuses on the ways in which the hunter-gatherer livelihood has been transformed into a resilient, simpler and ecological way of life. It is dedicated to hunting and identifies the contexts in which large wild game meat is consumed and the reasons why such a product is still valued today. The second part shows how some practices that aim to reconnect with natural processes are developing within a market economy. Case studies on natural wine and fasting retreats help us to identify the promises that producers and promoters are relying on in order to disseminate them. Finally, the third part considers how this process of rewilding food is expressed in post-modernity. By focusing on two normative frameworks in which the rhetoric of the wild is mobilized although it is not expected to be in these terms – urbanity and the gender order – the goal is to understand the extent to which referring to the wild in food discourses and practices contributes to challenging our identities, and to creating possible forms of emancipation. This book will be of great interest to students and scholars interested in food cultures, human nature relationships, and sustainable diets.

Book excerpt: This book is an invitation to question conventional and often misleading visions of globalization. No problem is global by nature: issues are transformed by the action of claims-makers to become ‘problems’ debated in supra-national forums, triggering policy choices and policy transformations. Contributions highlight how health issues, environmental issues and/or political issues are framed as global by a set of stakeholders (scientific experts, bureaucrats, political parties or actors, social movements, social networks, firms). As the volume maps the social logic behind the globalization of problems, it also presents an opportunity for the very cross-disciplinary collaboration it calls for: researchers mobilizing the “agenda-setting” paradigm of issue globalization and those working within the “social constructionist” model are both represented here, providing a unique opportunity to examine the dynamics of globalization from the perspectives of (political, media, economic) sociology, international relations, social movement studies, and beyond.

Available in PDF, EPUB and Kindle. Book excerpt: This book is designed to popularize Quinoa cereal among both scientific and food industry. Quinoa is an attractive candidate for protein replacement, has potential for futuristic biotechnological modifications, and is able to grow under many different abiotic stresses. To save the world from animal cruelty, quinoa emerges as a hero for vegans and vegetarians. This book deals with morphological features, life cycle, nutritional qualities, genetics, agronomic manipulations, ecological communications, stress tolerance mechanisms, and food applications of Chenopodium quinoa. Quinoa is a pseudo-cereal native to Andes Region in South America. Over time, it spread to many different regions worldwide and is emerging as protein-rich vegetarian food source. In order to cure malnutrition globally, it is important to channel this lesser-known grain to local cultivators. This can only be done through well-proven scientific data that supports its qualities. This book aims to do the same, while also giving an insight into the vast scope quinoa posses as an experimental crop. Its stress-tolerant abilities can inspire scientists to understand those mechanisms, further exploit them, and even introduce them into other stress-sensitive crops. In future, quinoa can be among the top sources that offer food security. Due to its adaptability, ease of cultivation, and rich output, sustainability can be achieved by regulating its breeding and growth. This book is of interest to researchers, teachers, agronomic cultivators, environmentalists, botanists, microbiologists, geneticists and food technologists. This book covers recent advances, challenges in cultivation, biology, nutrition, and agricultural science topics, suitable for both young learners and advanced scientists. Cultivators who want to know more about quinoa and introduce it into their agronomic applications will find helpful information from the text.
