Available in PDF, EPUB and Kindle. Book excerpt: Rabbit production systems are important providers of meat in many parts of the world. The species has many advantages, including rapid growth rate and good reproductive performance. It is adaptable in that it may be reared under intensive conditions, but is also successful under small scale production systems, which are of considerable value in the economics of emerging countries. Although not a ruminant, its digestive system allows it to thrive on high fiber raw materials. The meat has a comparatively healthy low fat image, which is increasingly important to consumers and there appear to be few impediments, such as religious considerations, to rabbit meat consumption. However, the science of rabbit production has received relatively little attention, although there are recognized rabbit research groups worldwide and a wealth of data exists in a scattered form in the literature. This book brings together that expertise under one cover. It covers a range of topics, from digestive physiology and nutrient/energy allowances to feed formulation and production. The information provided will be an invaluable asset to those involved in rabbit rearing, whether as companion animals or for meat production, and will also provide data of considerable interest to animal nutritionists and zoologists working on rabbits and related mammals.

Available in PDF, EPUB and Kindle. Book excerpt: Yeast biomass is an excellent source of proteins, nucleic acids, and vitamins. It has been produced and consumed in baked goods and other foods for thousands of years and offers significant advantages when compared to other potential new microbial protein sources. Use of Yeast Biomass in Food Production provides up-to-date information regarding the chemical composition and biochemistry of yeasts, discusses the biotechnological basis of yeast production and possibilities for influencing yeast biomass composition using new techniques in molecular biology. The book examines techniques for producing yeast protein concentrates (and isolates) while still retaining their functional properties and nutritive values, as well as the various uses for these materials and their derivatives in different branches of the food industry. Finally, the book explores possibilities for the production and industrial use of other yeast components, such as nucleic acids, nucleotides, cell wall polysaccharides, autolysates, and extracts. Food microbiologists and technologists, as well as biotechnologists, will discover that this book is an invaluable reference resource.

Available in PDF, EPUB and Kindle. Book excerpt: This comprehensive reference combines the technological know-how from five centuries of industrial-scale brewing to meet the needs of a global economy. The editor and authors draw on the expertise gained in the world's most competitive beer market (Germany), where many of the current technologies were first introduced. Following a look at the history of beer brewing, the book goes on to discuss raw materials, fermentation, maturation and storage, filtration and stabilization, special production methods and beermix beverages. Further chapters investigate the properties and quality of beer, flavor stability, analysis and quality control, microbiology and certification, as well as physiology and toxicology. Such modern aspects as automation, energy and environmental protection are also considered. Regional processes and specialties are addressed throughout the entire book, making this a truly global resource on brewing.

Available in PDF, EPUB and Kindle. Book excerpt: Wheat breeders have achieved significant results over the last fifty years in research on mankind's one of the most important crops. Classical genetic and breeding methods, far broader international cooperation than was experienced in earlier periods, and improvements in agronomic techniques have led to previously unimaginable development in the utilisation of wheat for human consumption. The contribution of wheat researchers is particularly noteworthy since these results have been achieved at a time when the world population has grown extremely dynamically. Despite this demographic explosion, of a proportion never previously experienced, thousands of millions of people have been saved from starvation, thus avoiding unpredictable social consequences and situations irreconcilable with human dignity. Despite these developments in many regions of the world food supplies are still uncertain and the increase in the world's wheat production has not kept pace with the population increase during the last decade. Due to the evils of civilisation and the pollution of the environment there is a constant decline in the per capita area of land suitable for agricultural production. Based on population estimates for 2030, the present wheat yield of around 600 million tonnes will have to be increased to almost 1000 million tonnes if food supplies are to be maintained at the present level.
