La razón es que no existe un único alimento que proporcione todos los nutrientes para mantener la vida y la salud. El consumo regular de un conjunto de alimentos (dieta) debe proporcionar las cantidades adecuadas de proteínas, lípidos, glúcidos, vitaminas y minerales. La base de una buena nutrición reside en el equilibrio, la variedad y la moderación de nuestra alimentación. Pero la alimentación moderna urbana es muy a menudo desequilibrada, desestructurada y se suele juntar con una vida cada vez más sedentaria. (1) La asignatura de Análisis de Alimentos de la Universidad Tecnológica de Pereira es una materia aplicada al programa de Tecnología Química, la cual pretende dar a los estudiantes no solo unas bases teóricas del análisis de alimentos si no también y con mayor intensidad horaria una parte practica. Este proyecto tuvo como finalidad la actualización del manual de análisis de alimentos de la Universidad Tecnológica de Pereira, con el fin de implementar en el laboratorio pruebas analíticas de mayor relevancia en el medio de la industria alimenticia, que además contaran con un tiempo razonable en la obtención de resultados los cuales serán confiables. El contenido del manual esta dividido en 11 capítulos, cada uno se enfoca en un cierto grupo alimenticio, se propuso una estructura definida e igual para todos los capítulos el cual cuenta con los objetivos de la practica, una introducción y/o marco teórico, materiales, reactivos con su respectivo R y S, los procedimientos para cada prueba, que van organizadas de forma tal que el tiempo del que se dispone sea optimizado, un cuestionario y la bibliografía, recursos del laboratorio y una mayor implementación de de técnicas instrumentales.
