Book excerpt: Extract: Because many people had questions and problems about canning fruits and vegetables, a nationwide survey was conducted to obtain a clear picture of the home canning situation. Data were collected on fruit and vegetable canning procedures and equipment used by households, their sources of instruction, and food spoilage observed. This information was based on practices followed in 1975, when one out of three households canned fruits, vegetables, or both. These products were canned in only 20 percent of the households in large metropolitan areas compared with 50 percent in rural areas. Tomatoes were the most popular item and were canned by three out of four households. Approximately one-fourth of the households reported some spoilage in their home-canned fruits and vegetables. Three out of four canners believed that it was due to lids that failed to seal properly. Although the survey did not determine the actual cause, information given by home canners indicated that some spoilage undoubtedly resulted from improper procedures. (author/wbf).

Certainly, anywhere in North America where people have spent a day, there you may find this sign of their occupancy. To-day the retailer receives from the wholesaler the larger portion of his food supplies in a package, which is transmitted unbroken to the consumer. A grocery-store consists largely of a collection of original packages. Of all these sanitary devices, the tin can is probably the most significant and the most universal. Fruits, vegetables, meats and milk have all been subjected to the virtue of this humble container. Nicholas Appert, in France, first preserved food in glass jars by sealing them hermetically and heating. He published "The Art of Preserving Animal and Vegetable Substances" in 1811. In 1810 Peter Durand obtained a patent in England for preserving fruits, vegetables and fish by hermetically sealing them in tin and glass cans. In 1820 William Underwood and Charles Mitchell, emigrant employees from a canning factory in England, opened a factory in Boston where they canned plums, quinces, cranberries and currants. Glass was used exclusively until 1825, when Thomas Kensett secured a patent for use of tin cans and commenced to use them in his factory. The preservation of foodstuffs lies in controlling the action of microorganisms. There are four methods of control in general use - desiccation, addition of toxic substances, refrigeration and exclusion. Spoiling is not due directly to the action of air or of heat and it is not simply a chemical or a physical change. When vegetable materials ferment, decay, or turn sour, the spoilage is due to the growth of certain microscopic living organisms, or germs. These all belong to the vegetable kingdom and are divided into three groups: molds, yeasts, and bacteria. Familiar exam ples of each group are the blue-green mold of spoiled fruits, the yeast used in bread making, and the bacteria of the scum, or mother, of vine gar. What we see in compressed yeast, for instance, is simply a mass consisting of millions of germs. Individual germs are too minute to be seen without a microscope. Their activities cause the molding of jellies, the swelling and souring of canned fruits, the spoiling of canned vege tables, and the putrefying of meats. The character of the material largely determines which type of spoiling will occur. Acidity is favor able to yeasts and molds. Fruits may therefore spoil by yeast fermenta tion or become moldy. Most bacteria prefer a medium with little or no acid. Decay of vegetables or meats is therefore usually due to the action of bacteria. Neither fruits nor acid vegetables are favorable to the growth of most bacteria. Yeasts, molds, and bacteria are widely distributed and occur in the air, in water, on fruits and vegetables, and in great abundance in soil and dust. Hence at the time of canning not only the fruit or vegetable but also, the sirup or brine and the containers are more or less heavily contaminated with all manner of microorganisms.
