Book excerpt: Excerpt from Practical Dietetics: With Special Reference to Diet in Disease Since the publication of the first edition of this work in 1895, great progress has been made in the study of dietetics. The scientific aspect of the subject has been notably advanced through the extensive researches of the Department of Agriculture in Washington, and of the allied Agricultural Experiment Stations in many different States, where food analyses, calorimetry computations, and investigations of the dietetic habits of different races and classes of men have done much towards placing the hitherto vague subject of dietetics upon an accurate scientific basis. In university and medical college laboratories much independent research has been devoted to the relationship between ingested food and excreta, and the complex processes of food metabolism in health and disease. Book excerpt: Excerpt from Principles of Human Nutrition: A Study in Practical Dietetics AN examination of this volume will at once make it evident that it was not prepared for use with students who have specialized in organic and biological chemistry. The object in view was rather such a presentation of the subject matter related to human nutrition as would be more or less adapted to popular use, but particularly to instruction of students with moderate scientific acquirements, whether in colleges, secondary schools, short courses, schools of domestic science, or correspondence schools. The reliable knowledge bearing on the nutrition of man is mainly to be found in elaborate works on physiology and physiological chemistry, the contents of which are not generally available. More over, the highly technical facts are usually not centered around a philosophy of living. The aim here has been to show the adjustment of this knowledge to a rational system of nutrition without insisting upon adherence to technical details that are not feasible in the ordinary administration of the family dietary. It is needless to state that the author makes no claim to having written on his own authority, but, on the other hand, he has relied upon the conclusions of those authorities and investigators whose sound scholarship in this field of knowledge is unquestioned. The following literature is that which has mainly been considered: Metabolism and Practical Medicine, Von Noorden; trans lated by J Walker Hall. d104book of Physiological Chemistry, Abderhalden; translated by William T. Hall. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Find more at www.forgottenbooks.com This book is a reproduction of an important historical work. This remark may be said to apply truly to every subject, but to none with greater force than that of diet.' We must all eat to live, and one would have thought that by this time such a universal habit would have become quite automatic, or at least encompassed by such stereotyped rules that there was no room for doubt as to its practice. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Diet in Health and Disease The continued appreciation of the profession as evidenced by their using this book has added greatly to the endeavor to make the fifth edition of more value than the preceding ones. There are scarcely any subjects in medicine that have received the same amount of attention of recent years as dietetics and the study of nutrition. The literature is voluminous and it would neither be possible nor profitable to try to include everything that has been brought forward. There are many differences of opinion among authorities on many questions which can only be settled by future study and in many cases the views expressed are diametrically op posed. Much of our knowledge on nutrition is fragmentary and the exact value of many contributions cannot be estimated until further investigations have been made. Dietetics has always been a sub jcet much influenced by fads and fancies and much of the literature has little value in consequence. The authors have endeavored to give fully the various facts relat ing to the composition of foods, to indicate as far as possible in the space of one volume the scientific basis, when there is any for the various diets and. To give at the same time practical directions and diet lists which can be used without extensive training. Book excerpt: Excerpt from The Study of Human Foods and Practical Dietetics The study of human foods has only recently begun to receive the attention that the importance of the subject demands. Up to fifty years ago little was known either of the composition of the human body or of the materials used as food. Since that time thorough scientific investigation has been inaugurated and the progress has been rapid. As is usually the case in all matters of scientific research, Germany took the lead, and the writings of Liebig, first published in 1842, may be considered as pioneer work. Some idea of the amount of chemical work done in Europe alone may be gained by noting that the first edition of Dietrich and Konig's compilation of analyses of feeding stuffs, published in 1874, is a thin volume of 100 pages, while the second edition, seventeen years later, is in two volumes containing pages. Book excerpt: Excerpt from Foods and Dietaries: A Manual of Clinical Dietetics A knowledge of the physiology of digestion lies at the root of sound practical dietetics, and although it does not come within the scope of the present work to enter into a lengthy examination of different foods and their properties, or into a detailed account of the mechanism of digestion, it may be well to advert very briefly to a few points regarding foods and normal digestion. For the present purpose foods may be grouped as (1) nitrogenous elements (albuminoids, proteids); (2) carbo hydrates (starches, sugars, (3) hydro-carbons (fats); (4) salts and water. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Food and Feeding in Health and Disease: A Manual of Practical Dietetics The aim of this work is purely practical. It aims at providing a complete and practical epitome for the dietetic student. It is now many years since the late Sir Henry Thompson, a distinguished authority on dietetics, pointed out that no one can be a really accomplished practitioner who has not made dietetic principles and practice an important part of their professional education, yet the subject of dietetics has still no recognised place in medical teaching, and the facilities for the student acquiring a practical knowledge of it can hardly be described as adequate. The first thing necessary for food and feeding in health and disease is to be well instructed in the elements of physiology, the nature of foods, the normal laws of feeding, as well as in the deviation by which the action of these laws is modified. To this must be added some practical acquaintance with kitchen usage and processes. A certain familiarity with the resources of the cook is essential to provide a suitable daily menu which will be agreeable to the invalid, and as much as possible varied within the narrow limits induced by the circumstances of each case. In the following pages an attempt is made to present this information concisely, and applied, so far as possible, to the everyday requirements of the medical practitioner. In the preparation of the work I have derived much help (more especially with the data of the chemical composition of foods) from many sources, special mention being made of the writings of Atwater, Langworthy, and of the analytical reports published from the Lancet laboratory. Book excerpt: Excerpt from Practical Observations Upon the Chemistry of Food and Dietetics There has probably never been a time when the attention of the public has been more generally di rected toward the care of the health than the present. Every newspaper in the land seems to have a column or a corner devoted to the development of the body, to the care of the skin, to the obliteration of wrinkles, to the attainment of beauty, or to some phase of the care of the body. Magazines devoted to physical culture, to diet, to vegetarianism, etc., are widely circulated and read; there are books devoted to the thesis that fruit acids are deleterious and poisonous, and other books to prove that they are__ indispensable. Pseudo-scientific articles attempting to show that potatoes produce large abdomens, that tea causes the teeth to protrude, that carbohydrates have the effect of overdeveloping the chin, that onions relax the jaw tissues, and a host of like absurdities, have appeared in popular maga zines. Books have been written which try to prove that all our ills come from uric acid foods, and many essays and pamphlets to show that that proposition was not true. Book excerpt: Excerpt from Dietetics IT is open to serious doubt whether the progress made in the study of dietetics has been of such a sweeping character as to warrant its inclusion in the category of the sciences. There are, however, many indications that it has advanced beyond the stage of a simple accumu lation of facts and experiences, and is preparing to take its place as a subject amenable to law. This short treatise does not pretend to be more than a fairly careful resume of the principles underlying the important question of nutrition, although I have endea voured to impart a personal character to the book by taking every opportunity of expressing my own views on all the important points. I am hopeful that it may serve as a guide of more than ephemeral interest and value, not only to those who desire no further acquaint ance with the subject, but to those who wish to pursue the fascinating study among the larger text-books. Work: Some Practical Remarks on Dietetics in Disease It is unnecessary to repeat here what has elsewhere been so fully and forcibly stated as to the manifold symptoms which re sult from the defective assimilation, the diffused tissue irritation and the circulation of abnormal elements in the blood. I wish however to make special allusion to the great frequency with which out of such causes there is gradually evolved the com plicated condition to which of late it is becoming the habit to apply the name of neurasthenia, and which is too often regarded as the result of pure nervous exhaustion from overwork and as therefore requiring for its relief simply tonics, rest and high feeding.
