Book excerpt: The story of Hawaiian cooking, by a two-time Top Chef finalist and Fan Favorite, through 100 recipes that embody the beautiful cross-cultural exchange of the islands. ONE OF THE TEN BEST COOKBOOKS OF THE YEAR: The New Yorker • ONE OF THE BEST COOKBOOKS OF THE YEAR: The New York Times, The Washington Post, NPR, Taste of Home, Vice, Serious Eats Even when he was winning accolades and adulation for his cooking, two-time Top Chef finalist Sheldon Simeon decided to drop what he thought he was supposed to cook as a chef. He dedicated himself instead to the local Hawai‘i food that feeds his ‘ohana—his family and neighbors. With uncomplicated, flavor-forward recipes, he shows us the many cultures that have come to create the cuisine of his beloved home: the native Hawaiian traditions, Japanese influences, Chinese cooking techniques, and dynamic Korean, Portuguese, and Filipino flavors that are closest to his heart. Through stunning photography, poignant stories, and dishes like wok-fried poke, pork dumplings made with biscuit dough, crispy cauliflower katsu, and charred huli-huli chicken slicked with a sweet-savory butter glaze, Cook Real Hawai‘i will bring a true taste of the cookouts, homes, and iconic mom and pop shops of Hawai‘i into your kitchen.

Available in PDF, EPUB and Kindle. Book excerpt: A fascinating personal memoir of underwater combat in World War II, told by a man who played a major role in those dangerous operations. Frank and beautifully written, Submarine Commander's breezy style and irrepressible humor place it in a class by itself. This book will be of lasting value as a submarine history by an expert and as an enduring military and political analysis. In early 1943 the submarine USS Scorpion, with Paul R. Schratz as torpedo officer, slipped into the shallow waters east of Tokyo, laid a minefield, and made successful torpedo attacks on merchant shipping. Schratz participated in many more patrols in heavily mined Japanese waters as executive officer of the Sterlet and the Atule. At war's end he participated in the Japanese surrender, aided the release of American POWs, and had a key role in the disarming of enemy suicide submarines. He then took command of the revolutionary new Japanese submarine I-203 and returned it to Pearl Harbor. But this was far from the end of Schratz's submarine career. In 1949 he commissioned the ultramodern USS Pickerel, the most deadly submarine then afloat, and set a world's record in a 21-day, 5,200-mile submerged passage from Hong Kong to Honolulu. With the outbreak of the Korean War, the Pickerel was immediately sent to Korea to participate in secret intelligence operations only recently declassified and never before revealed in print. Schratz's broad military experience makes this a far from ordinary memoir.

Available in PDF, EPUB and Kindle. Book excerpt: Unlikely Liberators is the action-filled story of the men of the 100th Battalion and the 442nd Regimental Combat Team. Not trusted to fight in the Pacific, these sons of Japanese immigrants were sent instead to the European theater. In the eyes of their own government and the Europeans they liberated, they were an unlikely group of fighting men. They nevertheless engaged the enemy with astonishing heroism, winning battle after battle at Anzio, Salerno, Cassino, and in the Vosges Mountains. At the end of the war, the 100th and the 442nd emerged as America’s most decorated units. They provided ample evidence of their patriotism to a country that had questioned their loyalty. Masayo Duus begins her story with the formation of the Japanese American units, which were an outgrowth of America’s ambivalent attitude toward the entire Japanese American community at the outbreak of the war. She recounts their experiences in training and during the early battles in Italy, including the conflicts between Japanese American and Caucasian troops. The final part of the story focuses on the battle in the Vosges forest, where the 442nd fought fiercely to rescue the "lost battalion" of Texans hopelessly cut off by the enemy. Based on extensive research in War Department archives and nearly three hundred interviews with veterans of the 100th and 442nd, Unlikely Liberators first appeared in serialized form in Japan, where it won the Bungeishunjusha Reader’s Prize. It is an absorbing and personalized account of young men suddenly separated from their families and friends, often confused and sometimes suspicious about what the army wanted from them. It portrays them as individuals confronting the multiple crises of war and social rejection and it shows that their greatest achievement was not their victory over a foreign enemy, but over prejudice at home. This book is a tribute to those men, who by their heroism reestablished for all Japanese Americans their personal dignity as full citizens in the country of their birth.
