Available in PDF, EPUB and Kindle. Book excerpt: The first Illustrated book containing essential information on Philippine food and eating habits, Kain Na! (which means "let's eat!") is a warm invitation to the country's communal dining table and its regional kitchens. Filipino food is the summary of Filipino history - from the indigenous food to the prehistoric era, to the influences of Asian cooking generated by trade, and the Colonial influences brought on by conquest. Yet for all its richness and diversity, little is known beyond dishes like adobo, sinigang, lechon. Kain Na! aims to change that. The first Illustrated tome of its kind contains essential information on Philippine food and eating habits. It is divided into 12 chapters. Almusal (breakfast), Lutong Bahay (home cooking), Meryenda (afternoon delights), Lutong Kalsada (street food), Paghimagas (desserts), Pulutan (bar chow), Pang-Pista (festival food), Inumin (beverages), Sa Panaderya (bakery finds), Kakanin (rice treats), Sawsawan (dipping sauces), and a section on ingredients key to the Filipino larder.

Available in PDF, EPUB and Kindle. Book excerpt: Covering topics ranging from the establishment of the Gulf Coast shrimping industry in 1800s to the Korean taco truck craze in the present day, this book explores the widespread contributions of Asian Americans to U.S. food culture. Since the late 18th century, Asian immigrants to the United States have brought their influences to bear on American culture, yielding a rich, varied, and nuanced culinary landscape. The past 50 years have seen these contributions significantly amplified, with the rise of globalization considerably blurring the boundaries between East and West, giving rise to fusion foods and transnational ingredients and cooking techniques. The Asian American population grew from under 1 million in 1960 to an estimated 19.4 million in 2013. Three-quarters of the Asian American population in 2012 was foreign-born, a trend that ensures that Asian cuisines will continue to invigorate and enrich the United States food culture. This work focuses on the historical trajectory that led to this remarkable point in Asian American food culture. In particular, it charts the rise of Asian American food culture in the United States, beginning with the nation's first Chinese "chow chows" and ending with the successful campaign of Indochina war refugees to overturn the Texas legislation that banned the cultivation of water spinach—a staple vegetable in their traditional diet. The book focuses in particular on the five largest immigrant groups from East and Southeast Asia—those of Chinese, Japanese, Korean, Filipino, and Vietnamese descent. Students and food enthusiasts alike now have a substantial resource to turn to besides ethnic cookbooks to learn how the cooking and food culture of these groups have altered and been integrated into the United States foodscape. The work begins with a chronology that highlights Asian immigration patterns and government legislation as well as major culinary developments. The book's seven chapters provide an historical overview of Asian immigration and the development of Asian American food culture; detail the major ingredients of the traditional Asian diet that are now found in the United States; introduce Asian cooking philosophies, techniques, and equipment as well as trace the history of Asian American cookbooks; and outline the basic structure and content of traditional Asian American meals. Author Alice L. McLean's book also details the rise of Chinese, Japanese, Korean, Filipino, and Vietnamese restaurants in the United States and discusses the contemporary dining options found in ethnic enclaves; introduces celebratory dining, providing an overview of typical festive foods eaten on key occasions; and explores the use of food as medicine among Asian Americans.

Available in PDF, EPUB and Kindle. Book excerpt: When Top Chef judge Gail Simmons first graduated from college, she felt hopelessly lost. All her friends were going to graduate school, business school, law school . . . but what was she going to do? Fortunately, a family friend gave her some invaluable advice-make a list of what you love to do, and let that be your guide. Gail wrote down four words: Eat. Write. Travel. Cook. Little did she know, those four words would become the basis for a career as a professional eater, cook, food critic, magazine editor, and television star. Today, she's the host of Top Chef: Just Desserts, permanent judge on Top Chef, and Special Projects Director at Food & Wine magazine. She travels all over the world, eats extraordinary food, and meets fascinating people. She's living the dream that so many of us who love to cook and eat can only imagine. But how did she get there? Talking with My Mouth Full follows her unusual and inspiring path to success, step-by-step and bite-by-bite. It takes the reader from her early years, growing up in a household where her mother ran a small cooking school, her father made his own wine, and family vacation destinations included Africa, Latin America, and the Middle East; through her adventures at culinary school in New York City and training as an apprentice in two of New York's most acclaimed kitchens; and on to her time spent assisting Vogue's legendary food critic Jeffrey Steingarten, working for renowned chef Daniel Boulud, and ultimately landing her current jobs at Food & Wine and on Top Chef. The book is a tribute to the incredible meals and mentors she's had along the way, examining the somewhat unconventional but always satisfying journey she has taken in order to create a career that didn't even exist when she first started working toward it. With memorable stories about the greatest (and worst) dishes she's eaten, childhood and behind-the-scenes photos, and recipes from Gail's family and her own kitchen, Talking with My Mouth Full is a true treat.

This book was released on 2023-08-03 with total page 216 pages. Available in PDF, EPUB and Kindle. Book excerpt: Agrifood systems in Asia and the Pacific can be strengthened by tapping on agrifood-tourism linkages. When tourism and agrifood systems interact, both synergies and competition appear. Agriculture and tourism compete between themselves and other sectors for land, water, labour, capital, and transport and logistics services. Cross-sectoral synergies arise when agriculture and tourism influence each other through their respective demand conditions and changes in the enabling environment. These cross-sectoral synergies can be instrumental in strengthening agrifood systems in the region and addressing interlinked crises in the post-pandemic era.Governments across Asia and the Pacific have acknowledged the potential of tapping into agrifood- tourism linkages to advance sustainable development in both urban (food tourism) and rural areas (mostly agricultural tourism), and are implementing efforts to develop this subsector.Agrifood-tourism linkages can create income-generating opportunities for farmers and tourism operators, boost employment and stimulate overall economic growth, promote the development of sustainable agrifood systems, prevent rural youth outmigration and help preserve culinary and agricultural heritage. This publication guides policymakers in the region in the preparation of a strategic plan aimed at developing agrifood tourism and the tourism food value chain as drivers of sustainable development. The successful positioning of a country or location as a culinary or agricultural tourism destination and the creation of synergies between the agriculture and tourism sectors requires a shared vision and coordination between policymakers, destination managers, tourism and agrifood businesses, chefs, farmers and other key stakeholders.
