Amphiphilic systems comprise lipids, surfactants as well as different types of polymers, including block and graft copolymers. Research on biological amphiphiles has often been conducted separate from research on synthetic ones. However, in recent years a very fruitful convergence between the two fields has evolved. The siloxane monolayers investigated had molecular weights ranging from 520 to approximately 105,000 and included both the ethoxy and trimethyl end-blocked polymers. The surface viscosity of even the highest molecular weight polydimethylsiloxane monolayer was extremely low, below the limit of sensitivity of the canal viscometer, which is of the order of 0.0001 surface poise. This surface viscosity is remarkably low when compared with monolayers of other polymeric materials that have been studied at the water/air interface. Many of these polymers such as poly-e-capramide (6-Nylon), the proteins, and synthetic polypeptides have given highly viscous, or viscoelastic, non-Newtonian films even at film pressures of only a few dynes/cm. The low surface viscosity of the siloxanes reflects the relatively low intermolecular cohesion that exists between adjacent siloxane chains in a monolayer. This low surface viscosity may in part explain the defoaming and antifoaming ability of the polydimethylsiloxane fluids. (Author).

For example, cell membranes owe their structure to the aggregation of surfactants known as lipids which form a major component of the membrane. Other natural surfactants occur in the digestive system, in the lungs, and even in such substances as crude oil. Man-made surfactants are used in a wide range of domestic and industrial products and processes. In addition to detergents and personal care products, surfactants have found uses in almost every branch of the chemical industry as well as in several other industries. These include dyestuffs, fibres, mineral process ing, oil field chemicals, paints, pesticides, pharmaceuticals and plastics. Surfactants are versatile materials which are manufactured in a huge variety of forms to suit all of these applications. As a result of their importance, the technical literature on all aspects of surfactant behaviour is now very extensive. Surprisingly, however, the treatment in textbooks has been somewhat fragmented, often in the form of conference proceedings or edited, multi-authored works, both lacking in continuity.

Studying dipole moments is the first step toward understanding phase behavior of various colloids with strong dipole moments. Since the Dipolar Hard Sphere fluid (DHS) is the simplest model described by dipolar interactions, studying this model is fundamentally important for understanding the structures and thermodynamics of polar fluids. A variety of unsolved scientific questions arises when the dimensionality of this model is changed and when other species are introduced in this model. Finally, the last part of this dissertation discusses the diffusion behavior of adsorbed polymers over the full concentration range. In Chapter 2, I study the phase behavior of dipolar fluids by means of Monte Carlo simulations. My goal in this chapter is to examine the possibility of phase separation in a dipolar fluid system and to use quantitative structural information to shed light on this controversy. How dimensionality affects the phase behavior of dipolar fluids is an interesting question. Thus, in Chapter 3, I examine the possibility of phase separation in quasi-2D dipolar fluids. In Chapter 4, I proceed to binary systems. Since I have excluded the possibility of phase separation in the DHS system and it is well known that the RPM system exhibits phase separation, these result naturally lead to the question whether phase separation takes place in mixtures that contain ions as well as dipolar particles. I map out the phase diagrams by varying the strength ratio of the dipolar to the ionic interaction and I also locate the critical points. In Chapter 5, I turn to a rather different research topic, namely the dynamics of adsorbed polymers. I employ molecular dynamics to investigate the relation between surface diffusion and conformation of adsorbed polymers over the full coverage range.
