Book excerpt: This cross-sectional study examined the factors that influence the food choices of college commuter students. An online survey was distributed to all undergraduate students 18 years or older who lived outside of the county that encompasses the university and were full-time (n=7,056). A total of 221 eligible students completed the survey. Multinomial cumulative and binary logistic regressions were used to examine the relationship between various factors and the healthiness of participants' diets. Additionally, Wilcoxon signed rank sum test was used to analyze the importance of specific variables on the food choices of participants. Cost, convenience, and health concerns appeared to influence the food choices of commuter students significantly more than weight control (p

Book excerpt: Globally, the food system and the relationship of the individual to that system, continues to change and grow in complexity. Eating is an everyday event that is part of everyone’s lives. There are many commentaries on the nature of these changes to what, where and how we eat and their socio-cultural, environmental, educational, economic and health consequences. Among this discussion, the term "food literacy" has emerged to acknowledge the broad role food and eating play in our lives and the empowerment that comes from meeting food needs well. In this book, contributors from Australia, China, United Kingdom and North America provide a review of international research on food literacy and how this can be applied in schools, health care settings and public education and communication at the individual, group and population level. These varying perspectives will give the reader an introduction to this emerging concept. The book gathers current insights and provides a platform for discussion to further understanding and application in this field. It stimulates the reader to conceptualise what food literacy means to their practice and to critically review its potential contribution to a range of outcomes.

Good health goes hand in hand with the ability to handle stress for the future. However, biological factors such as diet, life experiences such as drug abuse, bullying, burnout and social factors such as family and community support at the school stage tend to mold health problems, affecting academic achievements. This book is a compilation of current scientific information about the challenges that students, families and teachers face regarding health and academic achievements. Contributions also relate to how physical activity, psychosocial support and other interventions can be made to understand resilience and vulnerability to school desertion. This book will be of interest to readers from broad professional fields, non-specialist readers, and those involved in education policy.

Book excerpt: This book examines how the social environment affects food choices and intake, and documents the extent to which people are unaware of the significant impact of social factors on their eating. The authors take a unique approach to studying eating behaviors in ordinary circumstances, presenting a theory of normal eating that highlights social influences independent of physiological and taste factors. Among the topics discussed: Modeling of food intake and food choice Consumption stereotypes and impression management Research design, methodology, and ethics of studying eating behaviors What happens when we overeat? Effects of social eating Social Influences on Eating is a useful reference for psychologists and researchers studying food and nutritional psychology, challenging commonly held assumptions about the dynamics of food choice and intake in order to promote a better understanding of the power of social influence on all forms of behavior.

There are many programs to manage weight but few are designed for young adults. Many college students lack motivation to eat healthy because they are not worried about chronic diseases. Interventions are needed that fit with college students' busy lifestyles. Research shows understanding involvement, or how important or relevant a decision is, can be useful for developing effective nutrition interventions. The purpose of this study was to explore the influence of involvement and other factors on food decisions. Forty four UW-Stout undergraduates were surveyed on involvement and other factors necessary in making food decisions. Results indicate there were differences in involvement and food decision factors between males and females, with 50% of female participants with high involvement and 40% of male participants with low involvement in food decisions. Quality, taste, and healthiness were the top factors considered when making food choices. There was no correlation found between involvement and weight status. A larger sample size may be needed in future research to show significance. Improving involvement may be a useful when developing effective nutrition interventions to reach those who may not see food-choice decisions as significant or relevant.

Book excerpt: Considering the detrimental environmental impact of current food systems, and the concerns raised about their sustainability, there is an urgent need to promote diets that are healthy and have low environmental impacts. These diets also need to be socio-culturally acceptable and economically accessible for all. Acknowledging the existence of diverging views on the concepts of sustainable diets and healthy diets, countries have requested guidance from the Food and Agriculture Organization of the United Nations (FAO) and the World Health Organization (WHO) on what constitutes sustainable healthy diets. These guiding principles take a holistic approach to diets; they consider international nutrition recommendations; the environmental cost of food production and consumption; and the adaptability to local social, cultural and economic contexts. This publication aims to support the efforts of countries as they work to transform food systems to deliver on sustainable healthy diets, contributing to the achievement of the SDGs at country level, especially Goals 1 (No Poverty), 2 (Zero Hunger), 3 (Good Health and Well-Being), 4 (Quality Education), 5 (Gender Equality) and 12 (Responsible Consumption and Production) and 13 (Climate Action).
