Book excerpt: Abstract: Being overweight or obese as a child further increases the risk for obesity later in life as well as enhances the risk for developing diseases, including metabolic syndrome. Effective education-based nutrition education programs are needed to increase nutrition knowledge to combat the rise in obesity and metabolic syndrome among adolescents. Thus, a pilot summer wellness course was offered to high school students over a 3-week period. The educational intervention focused on physical activity and nutrition education to promote lifelong healthy behavior modifications among adolescents. Three sections of 30 students completed classroom learning and application projects based on the USDA's Team Nutrition curricula. Eighty-two high school students (ages 13-18) consented to participate in the research. Changes in nutrition knowledge were assessed through an examination given before and after the 3-week pilot course. The questions were divided among five domains: nutrition guidelines, energy balance, general nutrition knowledge, lifestyle choice and health outcomes. Total nutrition knowledge significantly increased from pre-test to post-test, 63.4% to 78.8% respectively. Nutrition knowledge significantly increased in four of the five domains-nutrition guidelines, energy balance, general nutrition knowledge, and health outcomes. Students' overall nutritional knowledge increased significantly over the 3-week pilot course. A school-based nutrition education program is an effective approach to develop an understanding of healthy lifestyle behaviors in adolescents. Future research should assess the changes in behaviors resulting from such education.

Summary of content: Dietary habits tend to sharply decrease during adolescence and remain low into adulthood. Due to their ubiquity amongst adolescents, smartphone applications may be a convenient and relatively low-cost approach to influence behaviour. In studies examining use of mobile applications to improve nutrition outcomes, only one reported knowledge outcomes. SmartAPPetite is a smartphone application designed to provide evidence-based, dietitian-approved food and nutrition-related messages to improve dietary behaviours. Systematic approach: Currently there are no validated tools to measure nutrition knowledge in English-speaking Canadians. Our 51-item Nutrition Knowledge Tool was modified from Parmenter and Wardleu2019s 2016 revised validated Nutrition Knowledge Questionnaire. Though originally developed in the UK, the questionnaire was modified to make appropriate for the Canadian adolescent population. It consists of questions regarding dietary recommendations, nutrient sources, food labelling and diet-disease relationships; topics discussed within SmartAPPetite. The tool will be completed at baseline, 10 weeks post-intervention and 4 months post-intervention, distributed via Qualtrics, an online survey software. Nutrition knowledge is measured as a cumulative score determined by the correctness of answers; each correct answer is given a score of 1 and all scores are summed for a final score ranging from 0 (no nutrition knowledge) to 51 (high nutrition knowledge). Conclusions/Recommendations: Research is underway using the Nutrition Knowledge Tool to assess potential changes in nutrition knowledge resulting from the SmartAPPetite intervention. Significance to the field of dietetics: The Nutrition Knowledge Tool can be used to assess efficacy of nutrition education programmes. It can shed insight on levels of nutrition knowledge in the Canadian adolescent population, which can be used to address gaps in nutrition education and ultimately provide evidence for public health efforts necessary to improve dietary habits.

Book excerpt: Prevalence of overweight and obesity among children and adolescents is a serious health concern today. School-based obesity prevention programs are limited in both quantity and quality. Even when programs have been successful in efficacy studies, few have described dissemination efforts, and few have investigated student outcomes. The purpose of this study was to examine the effectiveness of an obesity prevention middle school curriculum, Choice, Control & Change (C3) shown to be efficacious under research conditions. The current study answered the following questions: What are the curriculum effects on students' behaviors, psychosocial variables, and knowledge? What are the food-related behavior goals selected by students, and their self-perceived amount of behavior change? How are these behavioral goals and perceived amount of change associated with demographics and contextual factors? What is the role of the lead teachers in facilitating curriculum implementation? How do study outcomes of the current study differ from the original study? The study used a pre-test post-test intervention and control condition design with 750 students in a middle school in Michigan where students served as their own controls. A survey was administered to students 3 times to assess the primary behavior outcomes (processed packaged snacks, sweet drinks, fast food, physical activity, and sedentary behaviors), the secondary psychosocial variable outcomes (self-efficacy, outcome expectations, autonomy, competence), as well as science and nutrition knowledge outcomes. Three of the targeted behaviors (sweet drinks consumption, TV/movies viewing, and computer/video games playing), and two psychosocial variables (self-efficacy for packaged snack consumption and physical outcome expectations) showed significant changes. Science and nutrition knowledge, however, did not improve at the end of the study. Among students' contextual factors current weight control behavior had a strong association with self-perceived amount of behavior change. The impacts of the current study on students were similar in trends as the original study, even though they were not as strong, suggesting that a lead teacher model may be a useful strategy for future dissemination of the curriculum.

OBJECTIVE: Among a sample of adolescents in Michigan participating in Project Healthy Schools (PHS), a multi-component school-based intervention program, the objective of this dissertation is to 1) examine the effectiveness of the PHS program at achieving favorable change in participating students' dietary consumption of foods and/or beverages associated with CVD risk; 2) examine if achievement of optimal consumption of fruits and vegetables, sugar sweetened beverages (SSB) and levels of physical activity (PA) is associated with improvement in blood lipid and BP levels and; 3) determine if change in dietary consumption of foods high in saturated fatty acids (SFA) and trans-fatty acids (TFA) is associated with change in low density lipoprotein cholesterol (LDL-C) concentrations. DESIGN, SETTING, AND PARTICIPANTS: A non-randomized, quasi-experimental pre-post design evaluation of sixth grade students from 94 middle-schools across the state of Michigan enrolled in the first year of a school-based nutrition intervention program between 2005-2019. MEASURES: Measures of dietary intake and PA were collected from a validated health behavior questionnaire administered at baseline and following completion of the 10-week nutrition intervention program. Physiologic outcome measures of a non-fasting lipid profile which included total cholesterol [TC], high-density lipoprotein cholesterol [HDL-C], triglycerides [TG] and calculated low-density lipoprotein cholesterol (LDL-C), as well as systolic and diastolic BP measurements were collected. RESULTS: Intake of fruit and vegetables significantly increased post-intervention, as did consumption of sugary beverages. Students who were more physically active following the PHS intervention had significantly higher post-intervention HDL-C and lower TG levels, whereas students with low SSB intake post-intervention experienced lower post-intervention HDL-C levels compared to students with higher SSB intake. Reduced consumption of high-risk, high fat foods was associated with a significant decrease in mean LDL-C when compared with high consumption at baseline and follow-up. CONCLUSIONS AND FUTURE DIRECTIONS: Significant increases in dietary intake of fruit and vegetable consumption following participation in the intervention program were modest. Improvement in cardiometabolic risk factors were also observed. Students who improved their intake of foods high in saturated and trans-fat experienced the largest decreases in LDL-C post-intervention. The results also suggest that PA in this age group may be an effective way to improve HDL-C and TG levels, especially among high-risk students. Future work should examine whether modest changes in dietary consumption and/or PA levels can promote a meaningful shift in physiological measures of cardiovascular risk over a longer period of time.

Book excerpt: In Lebanon, the prevalence of overweight and obesity is approaching those in the US and other parts of the world. Since childhood obesity is related to many adv erse health consequences, community nutritional interventions are needed to addr ess the epidemic of childhood obesity. This study examined the effect of culturally appropriate nutritional education d elivered to 4th, 5th, and 6th grade students enrolled in three private schools i n greater Beirut on students' nutrition knowledge. This was done in order to enc ourage and teach them how to change and modify their lifestyle behavior and eati ng patterns toward a healthier and more nutritive performance. The study was divided into two phases: assessment and intervention. The assessme nt phase involved collecting anthropometric measurements, 24-hr food recalls, ca nteen's assessment questionnaire, schools' personnel interviews, and pretest nut rition knowledge questionnaires. Whereas the intervention phase involved deliver ing eight nutrition education lessons to students over a period of eight weeks. This was examined by providing the students with 25 multiple choice questions at the end of each phase; a scoring system ranging from -1 to 1 for each question was used to determine the effectiveness of the intervention. The questions revol ved around nutrition including the importance of breakfast, healthy snacking, fr uits and vegetables, fibers, physical activity as well as the avoidance of high fat and high sugar food items. Post-test scores of the intervention group increased significantly more than the post-test scores of the control group in nine questions out of the twenty five included in the questionnaire. Eight questions showed significant increase in th e scores of both groups. Eight questions didn't show significant increase in pos t-test scores of both groups. Although this study only demonstrated moderate changes in the students' nutritio n knowledge, however, there is a need to encourage educators to integrate such p rograms in their curriculum since this may in the long term improve children's a ttitudes towards making better food choices.
