Book excerpt: Intercollegiate volleyball is a powerful sport that consists of two to three hour matches; therefore, optimal physical condition is critical for top performance. This study assessed nutrition and anthropometric parameters at the start and conclusion of both the spring 2009 (no intervention) and spring 2010 (intervention) off-seasons as well as additional measurements four months after the intervention. The subject' body composition, total energy, carbohydrate and protein needs were calculated and intakes were assessed. The intervention consisted of monthly individual nutrition counseling sessions based on analysis of intake from three-day food records. Food records were analyzed using Nutrient Data System for Research software verified by interview. Dependent T-tests were conducted on anthropometric and dietary measurements. The results revealed that during the 2009 off-season, there were no significant changes in any parameters and 89% of subjects were not within recommended anthropometric and dietary guidelines. During 2010, body composition significantly decreased to optimal levels for the sport. In addition, energy and macronutrient intake significantly improved toward recommended guidelines. Four months later, the subjects' intakes and body composition were assessed again and results were compared to the spring 2010 results with no significant changes. These results indicate that providing nutrition assessment and intervention plays a critical role in physical conditioning of athletes.

Book excerpt: Research is finding that athletes are not following sports nutrition recommendations and principles for their athletic success and potential inadequacies within their diet could be related to poor nutrition knowledge. However, even with an increase in knowledge from the implementation of nutrition education interventions, athletes are still inadequately meeting their recommendations for training, which has been indicated that it could be related to their attitudes about sports nutrition and performance. Therefore, the purpose of this study is to assess sports nutrition attitudes, adequacy of diet and adherence to sports nutrition principles among NCAA Division 1 female soccer players immediately before and one week after a sports nutrition education intervention. The retrospective data included three questionnaires completed by participants: demographic questionnaire, Sports Nutrition Attitudes Assessment (SNAA), and 24-hour food recall. The current study found no significant difference in SNAA score (t=1.465, p=0.158) and adherence to sports nutrition principles (t = -0.170, p=0.867) following a nutrition educational intervention. A significant relationship was discovered between sports nutrition attitude scores and adequacy of diet (r=-.442, p [less than or equal to] 0.05) following a nutrition education intervention, suggesting that the more positive sports nutrition attitude the lower caloric intake the participants consumed. The findings of the present study suggest nutrition education for athletes needs to be continuous and meant to improve skill and behavior, not just knowledge.

Book excerpt: Context: There is little evidence on the comparison of dietary intake in female college volleyball players before and during the Covid-19 pandemic. Because of the pressures athletes face to perform, it is important to monitor how athletes respond to adversity. Diet is important to consider when analyzing the overall health of athletes. Objective: To investigate the effects of a global pandemic on kilocalorie intake and macronutrient consumption in collegiate female volleyball players. Design: Subjects were invited to provide two diet health questionnaires about dietary intake before and during the pandemic. The questionnaires were the same. Setting: An internet link to the survey with a username and password was sent via email in secure OneDrive Shared File. Participants: A total of 15 female collegiate volleyball participated in the study. Main Outcome Measures: Survey questions addressed habitual dietary intake before and during the pandemic. Total kilocalorie consumption and macronutrient consumption were analyzed and compared. Results: Players consumed 1539 kilocalories per day before the pandemic. During the pandemic there was a kilocalorie intake of 1400 kilocalories per day (p= 0.33798; d=0.17). Players consumed 209 grams of carbohydrates (CHO) before the pandemic and 171 grams during the pandemic (p=0.01204; d=0.36). Before the pandemic, the amount of CHO consumed was 3.12 g/kg. During the pandemic, this intake decreased to 2.63 g/kg. Before the pandemic 116 grams of sugar were consumed each day; during the pandemic only 77 grams of sugar were consumed (p=0.00010; d=0.60). Conclusions: This study shows CHO consumption in college volleyball players during the pandemic had a significant decrease compared to before the pandemic. Collegiate female athletes are still struggling to meet adequate carbohydrate consumption needed for competition and training before and during the pandemic. Reinforcing proper dietary habits may lead to better sport performance.
