Book excerpt: In ancient times foods fermented with lactic acid bacteria already constituted an important part of the human diet. From then on, lactic acid bacteria have played an essential role in the preservation of food raw materials and have contributed to the nutritional, organoleptic and health properties of human food products and animal feed. The important function that lactic acid bacteria still have in the production of foods all over the world has resulted in a growing scientific interest in these micro-organisms by academic research groups as well as by industry. During the last 15 years, this research has been stimulated by major internationally coordinated funding efforts that have resulted in a variety of important scientific breakthroughs and have led to new applications. Written by international experts in the field, this issue of Antonie van Leeuwenhoek documents these developments with respect to genetics, metabolism and the application of lactic acid bacteria for industrial and potential medical applications. In this book the first complete genome of a lactic acid bacterium is presented. The book will serve as a reference source and also as an indispensable source of information for further development and exploration of the field.

Book excerpt: Newly revised and updated, Delivering Culturally Competent Nursing Care, Second Edition, explores the cross-cultural interactions and conflicts between nurses and the diverse array of patients they may see. Culturally competent nurses can cut through preconceptions, reduce health disparities, and deliver high-quality care as they encounter patients from a range of backgrounds and beliefs. As frontline providers for diverse populations, nurses are expected to treat each patient with empathy and respect. This text addresses what it really means to be culturally competent in nursing practice. As representatives of specific cultural, racial, ethnic, and sociopolitical groups, nurses bring their own values, beliefs, and attitudes to all interactions with patients and with one another. Whether or not nurses choose to make their attitudes explicit, these attitudes ultimately influence the quality of care they provide to patients. The content of this book is grounded in the Staircase Model, which builds upon the nurse’s own self-assessment to identify personal limitations, find strategies to improve cultural competence, and progress to the next level. This text features case scenarios that apply the process of cultural competence to different healthcare situations. What’s New Three New Chapters Chapter 12: Caring for Patients Who Are Morbidly Obese Chapter 13: Caring for Veterans Chapter 14: Caring for Children Expanded content on caring for LGBTQIA community PowerPoint slides provided for instructors Key Features Addresses AACN competencies Provides easy-to-follow self-assessment using the Staircase Model Learning Objectives and Key Terms are identified in each chapter Overview of each chapter provides current information about trends in the United States on the topic under discussion Provides an excellent cultural competency preparation for student nurses in clinical situations as well as for practicing nurses at all levels and areas of nursing Presents content on immigration and transgender individuals

Available in PDF, EPUB and Kindle. Book excerpt: Obesity is currently regarded as one of the major health challenges of the developed world. Excess body weight is an important risk factor for morbidity and mortality from cardiovascular diseases, diabetes, cancer, musculoskeletal disorders and even psychiatric problems and is estimated to cause nearly 3 million deaths per year worldwide. Obesity is not necessarily associated with comorbidities: there are indeed metabolically healthy obese individuals. Thus, we need to consider individuals presenting simple with obesity separately from those at risk of developing or who have already developed complex clinical states potentially leading to disability. Comorbidities can tip the balance of independence in patients who already have functional limitations mainly due to the excess of mass itself or who develop conditions such as diabetes, cardiovascular conditions, non-alcoholic fatty liver disease, where an abnormal metabolism of adipose tissue prevails. Morbid obesity with comorbidities leading to disability represents a real social and economic burden for National Health Systems worldwide. The presence of multiple and associated comorbidities often represents an obstacle to being admitted to hospitals for the treatment of metabolic diseases. On the other hand, clinical units with optimal standards for the treatment of pathological conditions in normal-weight patients are often structurally and technologically inadequate for the care of patients with extreme obesity. The aim of this book is to focus on the pathophysiological and rehabilitative aspects of disabling obesity, highlighting multidisciplinary rehabilitation interventions as key to counteracting the disabling aspects of complicated obesity.

Available in PDF, EPUB and Kindle. Book excerpt: Albert Churchward's famous study of Ancient Egyptian myths and symbology reveals how their mythological culture evolved over thousands of years, influencing other civilizations. The author was among the first Western scholars to investigate the connection between the religious symbols, deities and traditions of Egypt, and those which emerged in later societies. By studying the hieroglyphic texts preserved in the monuments and papyrus of the Egyptian society, Churchward uncovered the origins of legendary stories, the roles of Gods like Horus and Ptah, and the emergence of important symbols such as the triangle, cross and swastika. The religious and cultural influence of this ancient society, whose dynasties stretched across millennia, is revealed to be of staggering magnitude. This book pieces together the connections between Egyptian lore and that of the Hebrews, the Freemasons, the Mayans and various tribal societies. The depth of Churchward's enquiry is enormous; hundreds of drawings, symbols, and photographs accompany the narrative, that the reader may discover the myriad connections and wide-ranging influence of the Egyptians from antiquity onward. Frequent quotations and cites of accomplished workers in the field of Egyptology, such as Dr. Wallis Budge and Gerald Massey, further support the points established.

Book excerpt: The Competency Based Fieldwork Evaluation for Occupational Therapists (CBFE) is a measure designed for faculty of fieldwork courses responsible for deciding methods of student evaluation. The CBFE allows therapists and students to evaluate the fieldwork experience in a variety of settings. It provides faculty members with a cumulative record of student competency acquisitions ensuring readiness for entry to practice. The CBFE captures current thinking in evaluation by basing student assessment on seven competency areas rather than a long list of skills. The competencies include: practice knowledge, clinical reasoning, facilitating change, professional interactions, communication, professional development, and performance management. The package contains a manual and two 16-page evaluation forms.

Book excerpt: This is one of the most significant military books of the twentieth century. By an outstanding soldier of independent mind, it pushed forward the evolution of land warfare and was directly responsible for German armoured supremacy in the early years of the Second World War. Published in 1937, the result of 15 years of careful study since his days on the German General Staff in the First World War, Guderian's book argued, quite clearly, how vital the proper use of tanks and supporting armoured vehicles would be in the conduct of a future war. When that war came, just two years later, he proved it, leading his Panzers with distinction in the Polish, French and Russian campaigns. Panzer warfare had come of age, exactly as he had forecast. This first English translation of Heinz Guderian's classic book - used as a textbook by Panzer officers in the war - has an introduction and extensive background notes by the modern English historian Paul Harris.

Book excerpt: After the completion of the National Research Council (NRC) report, Maintaining U.S. Leadership in Aeronautics: Scenario-Based Strategic Planning for NASA's Aeronautics Enterprise (1997), the National Aeronautics and Space Administration (NASA) Office of Aeronautics and Space Transportation Technology requested that the NRC remain involved in its strategic planning process by conducting a study to identify a short list of revolutionary or breakthrough technologies that could be critical to the 20 to 25 year future of aeronautics and space transportation. These technologies were to address the areas of need and opportunity identified in the above mentioned NRC report, which have been characterized by NASA's 10 goals (see Box ES-1) in "Aeronautics & Space Transportation Technology: Three Pillars for Success" (NASA, 1997). The present study would also examine the 10 goals to determine if they are likely to be achievable, either through evolutionary steps in technology or through the identification and application of breakthrough ideas, concepts, and technologies.
