Book excerpt: Estudos dos metodos de analise sensorial, instrumental e estatistica, adequados para avaliacao da qualidade do feijao, atraves de parametros especificos do sabor e da textura. O material utilizado consistiu em tratamentos das cultivares Carioca, Aroana e Rosinha G2, procedentes das localidades de Tiete, Mococa e Campinas, representando feijoes da seca e das aguas dos anos agricolas de 1978, 79 e 80 e que apos expurgados foram armazenados a temperatura ambiente (24-26 graus centigrados) e umidade relativa de 65-70 %, durante 6 meses, e excepcionalmente 14 meses para o feijao da seca/79. Foram realizadas analises sensoriais para medida do sabor e analises sensoriais, fisicas e instrumentais para a textura dos feijoes armazenados. Os resultados das analises fisicas mostraram: a) o tempo de cozinhabilidade variou entre as epocas inicial e 6 meses de armazenamento para o feijao da seca, mas nao para o das aguas. b) quanto a porcentagem de "hard shell" em 1978 o feijao da seca apresentou maior porcentagem, enquanto em 1979 foi o das aguas, cujas diferencas foram significativas ao nivel de 5 %. Em relacao ao sabor nao foram observadas diferencas significativas entre cultivares, mas sim entre localidades. Em relacao a textura sensorial a cultivar Carioca apresentou sempre melhor textura diferindo de Aroana e Rosinha G2. O contraste entre as epocas inicial e final de armazenamento foi significativo.
