Available in PDF, EPUB and Kindle. Book excerpt: Since publication of the previous edition of this successful book, there have been many advances in the field of food science and metal analysis and these have been taken into account of in compiling this new edition. Data on metal levels in foods and diets have been updated with information gathered from recent international literature. More than 80% of the text has been completely rewritten and, as the addition of a new subtitle suggests, greater account is taken than in earlier editions of the importance of the nutritional properties of many of the metals that we consume. In the compilation of this cutting-edge new edition, full account has been taken of the significant advances in the ready availability of multi-element analysis, improved sample preparation procedures and a growing interest in the content of chemical species in foods. Details of several metals, not considered in depth in previous editions but now widely used in the electronic and chemical industries, have also been included. The third edition of Metal Contamination of Food is an essential reference book for food industry personnel, including those working in food processing, formation and ingredients, packaging, quality control and food safety. Nutritionists, public analysts and chemists will also find much of great use within the covers of this book. Libraries and laboratories worldwide in all universities and research establishments where food science and technology, nutrition and chemistry are studied and taught should

Available in PDF, EPUB and Kindle. Book excerpt: Heavy metals and metalloids, singly or in combination, induce toxic manifestations either through acute or chronic pathology. In particular, long-term chronic exposure to diverse heavy metals and metalloids to humans and animals can lead to numerous physical, muscular, neurological, nephrological, and diverse degenerative diseases and dysfunctions, including multiple sclerosis, muscular dystrophy, Parkinson’s and Alzheimer’s diseases, cardiovascular disorders, and several others. Recognized heavy metals such as lead, mercury, arsenic, cadmium, thallium, and hexavalent chromium are known for enormous toxicity. The immediate vital signs of acute heavy metal exposure include nausea, vomiting, diarrhea, and acute abdominal pain. Mercury has been identified as the most toxic heavy metal, and mercury poisoning is known as acrodynia or pink disease. Similarly, lead, another toxic heavy metal, was at one time an integral part of painting. Metal Toxicology Handbook further explains and discusses the varying attributes of metals, discussing toxicity, safety, and proper human utilization of metals. Beginning with a broad overview of metals, metalloids, redox biology, and neurodegeneration and going further into the roles, benefits, and toxicity of metals with each section, the text contains 28 chapters from eminent researchers and scientists in their respective fields and is a must-have for anyone researching the potential toxicity in metals. Key Features Discusses the pathology of metal toxicity Highlights the benefits of metals Explains the mechanism and salient features of restoring metabolic homeostasis Highlights dose-dependent beneficial and adverse effects of vanadium safety and toxicity The initial introductory section provides a broad overview of metals, metalloids, redox biology, and neurodegeneration. The second section discusses the pathology of metal toxicity in two chapters, while the third section highlights the mechanism and salient features of restoring metabolic homeostasis in two chapters. The fourth section demonstrates the aspect of radionuclides toxicity. In a change of pace, the fifth section discusses the benefits of metals in four chapters. The sixth section, titled "Toxic Manifestations by Diverse Heavy Metals and Metalloids," provides fourteen chapters that discuss the toxicological mechanism and manifestation of individual metals. The editors have crafted a commentary titled "A Treatise on Metal Toxicity" and summarized a vivid scenario of metal toxicity and its consequences.

Book excerpt: Following a description of the various sources and factors influencing the contents of heavy metal pollution in post-catastrophic and agricultural soils, subsequent chapters examine soil enzymes and eggs as bio-monitors, lead adsorption, the effects of arsenic on microbial diversity, and the effects of Mediterranean grasslands on abandoned mines. A third section focuses on the adaptation strategies used by plants and bacteria, such as Pinus sylvestris in industrial areas, and the rhizosphere in contaminated tropical soils and soil treated with sewage sludge. Further topics addressed include strategies of bioremediation, e.g. using transgenic plants as tools for soil remediation. This new volume on heavy metals in soil will be of interest to researchers and scholars in microbial and plant biotechnology, agriculture, the environmental sciences and soil ecology.

A health risk to infants from the intake of heavy metals via bottled food cannot be excluded at the present time. It is the purpose of this symposium to increase our knowledge of these disquie ting facts. If 70% of all environmental chemicals, including the ubi quituous heavy metals, enter the human body through food, to what extent are infants affected? Generally speaking, the effect on children has thus far been ex cluded from all the discussions concerning safety margins or limits on heavy-metal intake. Furthermore, this age group has also been largely excluded from studies determining the acceptable daily intake values for other substances. Paradoxically enough, such studies often contain a comment to the effect that children are particularly sensitive to these substances. The lack of consideration is certainly also due to the fact that little attention has been paid to this age group in toxicological research. The ZEBS study Heavy Metals in the Infant Diet by Kaferstein and MUller points to a mechanism which may increase the contamination of infant diet, namely the water used to prepare infant formula. Such facts as well as models for risk characterization have been presented by MUller and Schmidt in these proceedings. Yet many questions remain.
