Available in PDF, EPUB and Kindle. Book excerpt: A vast literature exists dealing with trace metals and a number of outstanding monographs deal with the biological, biochemical, or clinical effects of a specific trace metal or trace metals in general. However, newer aspects of trace metal research, i.e. the developmental aspects and generic implications, have not been systematically discussed in any existing texts. The present two volumes will summarize the present status of research in these areas and serve as milestones for future development in these areas of trace metal research.

Available in PDF, EPUB and Kindle. Book excerpt: In keeping with the etiology theme, it also became apparent that the clinical aspects needed to be strictly separated from the animal aspects of zinc metabolism, a separation that has never previously been attempted. Although this division, like the separation of primary from secondary zinc depletion, may be somewhat arbitrary, it is the author‘s impression that current knowledge of the truly clinical aspects of zinc metabolism is too often confused with its effects in animals. The two will frequently be similar, but not always. In this book, therefore, animal studies are considered in part 2 (Biochemistry. Only a handful of references to animal studies has been included in part 1 (Clinical). The purpose of this separation is to clearly distinguish animal from human, experimental from clinical. Too many of the animal studies have involved severe and prolonged zinc deficiency or other exaggerated nutritional conditions that cannot be realistically applied in the clinical setting. Furthermore, animal studies are mainly or primary (dietary) zinc depletion, whereas in humans, secondary zinc depletion is more prevalent and has a more diverse etiology.

Book excerpt: From the Preface The major change in the format of the fifth edition is the presentation of the book in two volumes, necessitated by the rapidly increasing knowledge of metabolism, interactions, and requirements of trace elements. The guiding principle was to present the minimum of results that would serve as a logical foundation for the description of the present state of knowledge.

Available in PDF, EPUB and Kindle. Book excerpt: This volume presents information regarding the mechanisms of protein absorption under normal and pathologic conditions, in addition to reviewing changes that occur at various stages of life. General modifiers of intestinal absorption, such as the processing of foods, the nutritional status of the individual, and disease, are explored with reference to both proteins and minerals. Inorganic macronutrients, namely calcium, magnesium and phosphorus, are discussed in relation to protein ingestion. The book also explores the concept of essential trace elements (e.g., iron, zinc, copper, and iodine) and their link to protein sufficiency. The relationship of ultratrace elements with the content of proteins in food is examined, and the book offers a fresh view of the role of certain elements, particularly zinc, on the conformation of proteins linked to DNA, hormone receptors, and gene products. Protein Nutrition and Mineral Absorption is packed with 2,300 references, 100 figures and graphs, plus 25 tables. Nutritionists and physicians will find this book to be an invaluable reference source for rationalizing nutritional interventions and diet modifications for their patients.

Available in PDF, EPUB and Kindle. Book excerpt: Metal Ions in Biological Systems is devoted to increasing our understanding of the relationship between the chemistry of metals and life processes. The volumes reflect the interdisciplinary nature of bioinorganic chemistry and coordinate the efforts of researchers in the fields of biochemistry, inorganic chemistry, coordination chemistry, environmental chemistry, biophysics, pharmacy, and medicine. Volumes deal with such topics as the formation, stability, structure, and reactivity of biological compounds of low and high molecular weight containing metal ions; the metabolism and transport of metal ions and their complexes; and new models of complicated natural structures and processes. Volume 21 describes the underlying theories of nuclear magnetic resonance (NMR), promoting a wider use of NMR in studies of paramagnetic species. In six concise chapters by leading international authorities, Applications of Nuclear Magnetic Resonance to Paramagnetic Species outlines the most recent developments regarding the use of nuclear relaxation as a source for structural information ... examines studies of magnetically coupled metalloproteins and metal-porphyrin induced dipolar shifts for conformational analysis ... and evaluates the potential of paramagnetic ions as agents for enhancing NMR image contrast. With over 500 references that facilitate further research, Applications of Nuclear Magnetic Resonance to Paramagnetic Species is an essential resource for scientists and students in such disciplines as biophysics; bioinorganic, inorganic, and coordination chemistry; biochemistry; molecular biology; and enzymology. The question seems incredible, yet one-fourth of the costs caused by nutrition-related illness result at least partly from micronutrient malnutrition. The experts in this book look for the answer among recently improved data about our changing lifestyles and eating habits. They suggest that reduced calorie intake is leading to critical micronutrient status in some population groups in Western Europe. The problem stems in part from the difficulty in estimating the milder stages of undernourishment, in part from the difficulty in believing that people suffer from poor nutrition in the midst of overconsumption. The chapters specifically examine the functional consequences of the present marginal nutritional deficiency. The authors are epidemiologists, nutritionists, chemists and physicians representing nine European countries. Their contributions paint a complete picture of international expertise on micronutrient malnutrition.
