Book excerpt: The genus Salvia represents nearly 1,000 species that are widely distributed around the world. It is the largest in the Lamiaceae family. Traditionally, infusions of Salvia species have been widely used to treat oral inflammation, throat and headaches, and digestive disturbances in various folklore- and ethno-medicine practices worldwide. The antispasmodic, antiseptic and hypoglycemic effects of their extracts have been recognized by the ancient healers a long time ago before the development of modern medicine. With the advances in phytochemistry and pharmacology, terpenes, polyphenols and volatile compounds have been recognized as the source of bioactivity in Salvia extracts. Nowadays, because of their valuable pharmaceutical and nutraceutical properties, many Salvia species have been widely used as ingredients in food, pharmacy and cosmetic industries. The economic importance of Salvia plants continues to increase, following closely the growing interest to the concept for modern healthy lifestyle, based on prevention by consuming quality foods and nutraceutical supplements of natural origin. However, the growing demand has led to overexploitation of natural habitats and in the last few years many wild growing Salvia species have shrunk or fallen under threat. Obviously, to deal with that problem and to prevent ecological crisis, there is an urgent need for alternative, renewable sources of Salvia biomass. Plant biotechnology can provide a wide range of tools for development of economically feasible continuous production of standardized valuable phytochemicals. Plant in vitro culture technology is a powerful method for continuous production of plant secondary metabolites under controlled conditions, recently adapted to various Salvia species. Salvia in vitro systems are harmless to natural plant populations and can be grown independently of environmental factors, geographical latitude, climatic change, and seasonal variations. Several bioactive metabolites from rare and endangered Salvia plants can be produced by employing different plant in vitro systems. However, the researches on development of large scale biotechnology, based on Salvia in vitro systems, are still in early stages and many points still have to be addressed before the commercialization to take place. In this book we intend to summarize the recent achievements in research with Salvia in vitro systems as biological matrixes for the production of pharmaceutically important secondary metabolites. Further we invited leading experts to present their recent studies on phytochemistry, ethnobotanical and ethnophamacological aspects of genus Salvia. Safety and legal issues related to implementation of Salvia plants and in vitro cultures extracts in foods, cosmetics and pharmaceutical products will be discussed as well.

Book excerpt: Why did Guatemalan immigrant Mino Torres try to rape Quebec student Ariane? What was the failed attempt's aftermath? In this terse, prize-winning novel, Marie Helene Poitras, with an imagination tutored by the Minotaur myth, offers a controversial tale about a thug who exults in his ferocious urges and is as incorrigible as a primal force. Torres (the bull) enthusiastically and unapologetically seeks hectic transcendence through rape and recurring fits of epilepsy. Ariane (Ariadne), straying into his twisted, downtown Montreal labyrinth, suffers the consequences of his random sexual predation, though significantly, her refusal to be a terrorized and passive victim haunts him. Ariane's deliverance from his maze, her conquest of persistent fears, is prolonged past her assailant's capture. Once more she must learn to live and love - in particular, men - to pick up and follow the thread of human trust, to feel sure again about her flat's dark places and her walk-in cupboard's contents. On the site of the Berlin Wall, in a reunified Germany that has survived its own and other regimes' violent perversions, she permits herself to be gently hoisted up and passed from palm-to-palm over a vast and joy-filled crowd.

Book excerpt: Bach flowers are an alternative medicine created by the British doctor Edward Bach. It is now known that our emotional states have a profound influence on our well-being and health. An altered emotional state that repeats itself every day creates real dysfunctions in our body. 90% of the causes of human disease come from planes beyond the physical, and it is on these planes that symptoms begin to manifest before the physical body shows any disturbance. Bach Flowers rebalance emotions. They address only and exclusively how we react emotionally to the vicissitudes, experiences and problems in our days. They give great serenity and peace, courage or strength, they help us feel at the fullest of our possibilities. They can be useful in the face of an illness, not from a physical point of view but just as a mood support. The person is seen as a complete individual where emotions are a pivotal point, and not just as a physical body with symptoms. It is therefore necessary to analyze the emotional state and not the physical symptoms, based on this the suitable remedies are found. In fact, subjects with identical physical problems react and live with different emotions and feelings. Bach Flowers do not help to repress negative attitudes, but transform them into their positive side. Bach has thus divided the 38 flowers from which the remedies are drawn. The very first flowers discovered by Bach were the so-called "12 Healers", which the Welsh doctor promptly began to experiment first on himself and then on his patients; the other 26 were discovered shortly after, divided into "7 Helpers" and "19 Assistants".

Available in PDF, EPUB and Kindle. Book excerpt: Food chemistry is the study of chemical processes and interactions of all biological and non-biological components of foods. The biological substances include such items as meat, poultry, lettuce, beer, and milk as examples. It is similar to biochemistry in its main components such as carbohydrates, lipids, and protein, but it also includes areas such as water, vitamins, minerals, enzymes, food additives, flavours, and colours. This discipline also encompasses how products change under certain food processing techniques and ways either to enhance or to prevent them from happening. An example of enhancing a process would be to encourage fermentation of dairy products with lactic acid; an example of a preventing process would be stopping the Maillard reaction on the surface of freshly cut Red Delicious apples whether by hand or mechanical methods. This book presents the recent research from around the world in this field.
