Book excerpt: At first glance, trends in increased hunger and obesity in the United States (US) would seem to represent the result of different causal mechanisms. The United States Department of Agriculture (USDA) reported that nearly 50 million Americans had experienced hunger in 2009. A year later, the Centers for Disease Control and Prevention published a report showing that 68% of the US population was either overweight or obese. Researchers have found that these contrasting trends are actually interrelated. Being so, it is imperative that communities and individuals experiencing problems with food security are provided better access to healthy food options. In response to the need to increase healthy food access, many farmers markets in the US have received funding from the USDA to accept vouchers from federal food security programs, such as the Supplemental Nutrition Assistance Program (SNAP). In Downtown Phoenix, Arizona, one organization accepting vouchers from several programs is the Phoenix Public Market. However, the mere existence of these programs is not enough to establish food security within a community: characteristics of the population and food environments must also be considered. To examine issues of food security and public health, this thesis utilizes geographical information systems (GIS) technology as a tool to analyze specific environments in order to inform program effectiveness and future funding opportunities. Utilizing methods from community-based participatory research (CBPR) and GIS, a mapping project was conducted in partnership with the Market to answer three questions: (1) what is the demographic makeup of the surrounding community? (2) What retailers around the Market also accept food security vouchers? And (3) where are food security offices (SNAP and WIC) located within the area? Both in terms of demographic characteristics and the surrounding food environment, the project results illustrate that the Market is embedded within a population of need, and an area where it could greatly influence community food security.

The frustration over not having employment when my insights are needed most is the reason I wrote this non-fiction book. I will dive into all aspects of the proper way we should have handled things from the virus-jumping species in Wuhan, China. New emerging viruses need to be treated with proper protocol. Testing and Remediation are pivotal for a quicker, safer, and more prosperous outcome after a global and country-wide pandemic. I was an EH&S Manager at IBM (Lexmark) and Oracle (Sun Microsystems). I will provide learn-ed facts, and new scientific-based ideas for a healthier future for not only this pandemic but future ones as well. Politicians, business leaders, and school administrators are making decisions that should be made by scientific experts, I feel sorry for them. Listen to my advice as I am a fresh young set of eyes and ideas with expertise that will be helpful. I think you will enjoy the read. It’s positive in nature, though it may point out a few negatives. So far in 2023, there will only be two eBooks in this series. I like to be a very positive and happy person. The school shootings and pandemic cluelessness basically forced me as an environmental professional who worked in safety management at IBM and Oracle (Lexmark IBM Printer Division & Sun Microsystems respectively) to write these two eBooks for closure to my horrible experience with the health and safety industry in the United States, it's all for show and window dressing as businesses always do what they want anyways, science be damned...really. The two protocols we use regularly are fairly simple in nature and were intended to be that way. First is emergency response = 1) Identify the Hazardous Situation; 2) Evaluate Corrective Measures Necessary or Means of Evacuation; 3) Notify Superiors or First Responders - as the Problem Situation Could Kill or Wound You Making You Unable to Get Help to Arrive On-scene in a Timely or Effective Manner or simply warn people to stay away or evacuate; and finally 4) Control Measures that can be safely done until help and assistance arrive, fairly simple to comprehend. Now with pandemics, you can apply well-established spill containment protocols as if it were a biohazard waste spill and the clean-up procedures and containments deemed necessary. In hazardous spill safety protocols. There is not enough being done for engineering controls (HVAC) to combat airborne viruses where simple Indoor Air Quality engineering control measures would help keep us healthy. This can be combined with the tools we use for ISO 14000 and OSHAS 1800 for producing more environmentally health and safety-friendly manufacturing products like printers and tape drives (Lexmark & Sun). So the protocols are simple and the masking was done improperly quickly and without sound PPE wearing instruction or fit-testing for a seal to the face. The protocols for safer more environmentally friendly manufactured products and proactive pre-pandemic preparedness; and are 1) Substitution = Use a more environmentally friendly chemical or process or get injected with a weakened form of that pandemic's viral phages (Vaccinations); 2) ENGINEERING CONTROLS = the most overlooked debacle in the Covid 19 response other than testing. Engineering controls are machine guarding, vented tables and walls, plexiglass shielding, etc and in contagious disease emergencies can provide more effective control than PPE ever could. 3)Administrative Controls which simply means limiting or sharing smaller amounts of time in a hazardous area through work area scheduling.; and then finally we get to 4) the least desirable control measure PPE, why nobody wears it correctly and good fit must be established or why have a mask on at all. So in Industry and Manufacturing PPE is always the last resort but is often used up front, just in case the contaminant splashes on you or settles out of the air on you or into you (digestion and respiration). If one person or lots of people aren't wearing masks properly it completely not onl;y defeats it;'s intended purpose but makes things worse! Argh!... Scientists and Engineers need a 50/50 say with business managers when it comes to school and workplace/crowded environments as well. This means we did not do the proper pros/cons or costs/benefits analysis together well enough as businessmen and scientists at the onset of the contagion getting "released" or "jumping species". The same goes for school shootings and mass shootings if we merely apply these 8 established protocol guides. The 8 protocols from Environmental Health and safety management and response that were largely ignored were more than a crying shame and borderline negligent in nature. I sat on the sidelines unemployed with graduate-level epidemiology and EH&S training, why was I sitting on the sidelines while nincompoops were managing situations they have no business managing in the first place. Because we did not have built-in failsafes from an engineering control measures aspect as well as enough money to employ the right people and decision-makers in nationwide and worldwide health emergencies. It was beyond absurd. We need better preparation and proactivity for the next pandemic that is coming?...(when, who knows maybe next year, ugh).
