Those successes, however, often came at the expense of other natural resources, leading to contamination and degradation of land and water. In A Thousand Ways Denied, John T. Arnold documents the oil industry’s sharp interface with Louisiana’s environment. Drawing on government, corporate, and personal files, many previously untapped, he traces the history of oil-field practices and their ecological impacts in tandem with battles over regulation. Arnold reveals that in the early twentieth century, Louisiana helped lead the nation in conservation policy, instituting some of the first programs to sustain its vast wealth of natural resources. But with the proliferation of oil output, government agencies splintered between those promoting production and others committed to preventing pollution. As oil’s economic and political strength grew, regulations commonly went unobserved and unenforced. Over the decades, oil, saltwater, and chemicals flowed across the ground, through natural drainages, and down waterways. Fish and wildlife fled their habitats, and drinking-water supplies were ruined. In the wetlands, drilling facilities sat like factories in the midst of a maze of interconnected canals dredged to support exploration, manufacture, and transportation of oil and gas. In later years, debates raged over the contribution of these activities to coastal land loss. Oil is an inseparable part of Louisiana’s culture and politics, Arnold asserts, but the state’s original vision for safeguarding its natural resources has become compromised. He urges a return to those foundational conservation principles. Otherwise, Louisiana risks the loss of viable uses of its land and, in some places, its very way of life.

Asian-Cajun Fusion: Shrimp from the Bay to the Bayou provides insightful analysis of this paradox and a detailed, thorough history of the industry in Louisiana. Dried shrimp technology was part of the cultural heritage Pearl River Chinese immigrants introduced into the Americas in the mid-nineteenth century. As early as 1870, Chinese natives built shrimp-drying operations in Louisiana’s wetlands and exported the product to Asia through the port of San Francisco. This trade internationalized the shrimp industry. About three years before Louisiana’s Chinese community began their export endeavors, manufactured ice became available in New Orleans, and the Dunbar family introduced patented canning technology. The convergence of these ancient and modern technologies shaped the evolution of the northern Gulf Coast’s shrimp industry to the present. Coastal Louisiana’s historic connection to the Pacific Rim endures. Louisiana shrimp constitute the American gold standard of raw seafood excellence. Yet, in the second decade of the twenty-first century, cheap imports are forcing the nation’s domestic shrimp industry to rediscover its economic roots. “Fresh off the boat” signs and real-time internet connections with active trawlers are reestablishing the industry’s ties to local consumers. Direct marketing has opened the industry to middle-class customers who meet the boats at the docks. This “right off the boat” paradigm appears to be leading the way to reestablishment of sustainable aquatic resources. All-one-can-eat shrimp buffets are not going to disappear, but the Louisiana shrimp industry’s fate will ultimately be determined by discerning consumers’ palates.

Pick up any lengthy treatise on humankind written in the last quarter of the nineteenth century and the chances are good that the word evolution will appear somewhere in the text. If for some reason the word itself is absent, the odds are excellent that at least the concept of change over time will have a central role in the discussion. After one of the preeminent (and often vilified) social scientists of the nineteenth century, Herbert Spencer, popularized the term in the 1850s, evolution became more or less a household word, usually being used synonymously with change, albeit change over extended periods of time. Later, through the writings of Edward Burnett Tylor, Lewis Henry Morgan, and others, the notion of evolution as it applies to stages of social and political development assumed a prominent position in anthropological disc- sions. To those with only a passing knowledge of American anthropology, it often appears that evolutionism in the early twentieth century went into a decline at the hands of Franz Boas and those of similar outlook, often termed particularists. However, it was not evolutionism that was under attack but rather comparativism— an approach that used the ethnographic present as a key to understanding how and why past peoples lived the way they did (Boas 1896).
