Différentes méthodes de cartographie etd’analyse des performances des sujets ont ainsi été comparées, puis des améliorations ontété proposées. La prise en compte du scaling (tendance d’un sujet à disperser ses notes plus–ou moins- que le panel) et l’adaptation de cartes à des modèles statistiques spécifiques ontété tout particulièrement étudiées.Ce travail a abouti à la documentation de certaines pratiques de l’analyse sensorielle et àl’établissement de recommandations à destination des animateurs de panel. Les différentesméthodes proposées dans cette thèse ont été implémentées sous R (librairies CVAPack,MAMCAP, MultiMAM), et sont donc directement utilisables par tout animateur de panel.Tous ces outils sont transposables dans d’autres domaines scientifiques utilisant l’êtrehumain comme instrument de mesure (psychologie, économie..).
