Alors que la réglementation impose un une évaluation du degré de contamination de ces sites, elle ne prend pas en compte les sous-produits de transformation tels que les composés polaires, peu considérés. Pourtant ils se solubilisent dans la phase aqueuse par percolation des eaux météoriques à travers ces surfaces contaminées. Bien que la littérature ciblant la matière organique dissoute (MOD) d'origine naturelle soit abondante, elle n'est pas directement transposable à la MOD issues des friches contaminées, qui reste à définir pour une meilleure compréhension du devenir de la pollution dans ces sites anthropisés. Une approche multi-techniques a été appliquée pour appréhender le plus précisément possible la MOD issue de terres d'anciennes cokeries et usines à gaz, par le biais d'expériences en laboratoire et des dispositifs de terrain (lysimètres). L'étude de ces derniers montre qu'ils contiennent une forte teneur en MOD aromatique, dont les composés aromatiques polycycliques ne représentent qu'une faible proportion de la MOD totale. Des expériences complémentaires ciblant l'influence de certains paramètres (pH et hydrophobicité) suggèrent un lien fort entre le pH et l'organisation spatiale de la MOD, ainsi qu'une diminution de la masse moléculaire apparente avec l'augmentation de l'hydrophobicité. Des expériences de vieillissement artificiel ont montré un enrichissement en produits polaires condensés entraînant leur forte mobilisation par l'eau.

L'objectif de ce travail était de comprendre la dynamique du terme source de HAP représenté par des particules de goudron et le mode de transport des HAP dans les sols contaminés depuis des dizaines d'années. Pour cela, des échantillons de sol et de goudron ont été collectés sur une friche industrielle et caractérisés par les techniques analytiques de la géochimie organique (GC-MS, micro spectroscopie IR). Le transfert des HAP en solution aqueuse à partir du goudron de houille a été étudié en colonne de laboratoire fonctionnant en boucle fermée; les résultats ont été interprétés par un modèle d'équilibre de partage entre phases et de cinétique de transfert. Le transport des HAP dans le sol contaminé a été étudié en colonne de laboratoire, les collectes ont été fractionnées (ultrafiltration et ultracentrifugation). On a montré que les HAP étaient transportés avec d'autres composés organiques à des concentrations souvent supérieures à leur solubilité dans l'eau: une part importante des HAP incluant les composés lourds est transportée par voie colloïdale. De plus, la comparaison des analyses organiques des phases solides et des collectes a mis en évidence des anàlogies de signature des HAP. Enfin, on a cherché à évaluer l'intérêt du traçage réactif pour la mesure de paramètres globaux (fraction de carbone organique foc et aire de l'interface eau/matière organique). Contrairement au phénol, le toluène a donné de bons résultats pour la mesure de foc, tandis que l' octylbenzènesulfonate de sodium n'a pas permis de mesurer l'aire interfaciale. En conclusion, ce travail a permis d'apporter des réponses précises sur la dynamique du terme source de HAP et le transport des HAP dans le sol par voie dissoute et colloïdale, base d'un modèle conceptuel et point de départ pour le passage à l'échelle pilote et de terrain.

Trois polluants modèles ainsi que plusieurs fractions de sols et des sols de référence ont été sélectionnés lors de notre étude qui s'est déroulée en 2 principales étapes: - Etude des équilibres et des cinétiques de partage des polluants organiques entre le goudron de houille et l'eau -Etude de l'adsorption et de la désorption des polluants organiques dans le sol, en considérant les cinétiques de transfert à court et à long terme. Les résultats expérimentaux nous montrent que le goudron de houille ne possède pas un comportement idéal décrit par la loi de Raoult. Les principaux mécanismes de transfert goudron/eau identifiés sont la solubilisation quasi-instantanée des polluants proches de l'interface PLA/eau, et la diffusion lente des polluants au sein de la PLNA et à l'interface. Les résultats montrent de plus que plusieurs facteurs peuvent modifier la vitesse et l'ampleur du relargage (température, pH, force ionique, vieillissement de l'interface ...). Les résultats de la seconde partie de l'étude montrent une diminution de la mobilité des polluants avec l'augmentation de la durée de contact polluant/sol. Nous avons de plus observé que la succession des cycles de gel/dégel tendait à limiter l'effet du vieillissement. La rétention à cinétique lente du polluant par le sol ou l'argile est très probablement due à la lente diffusion moléculaire au sein des micropores des agrégats ou bien au sein de la matière organique du sol

Book excerpt: Unless a food is grossly contaminated, consumers are unable to detect through sight or smell the presence of low levels of toxic chemicals in their foods. Furthermore, the toxic effects of exposure to low levels of chemicals are often manifested slowly, sometimes for decades, as in the case of cancer or organ failure. As a result, safeguarding food from such hazards requires the constant monitoring of the food supply using sophisticated laboratory analysis. While the food industry bears the primary responsibility for assuring the safety of its products, the overall protection of people’s diets from chemical hazards must be considered one of the most important public health functions of any government. Unfortunately, many countries do not have sufficient capability and capacity to monitor the exposure of their populations to many potentially toxic chemicals that could be present in food and drinking water. Without such monitoring, public health authorities in many countries are not able to identify and respond to problems posed by toxic chemicals, which may harm their population and undermine consumer confidence in the safety of the food supply. From a trade perspective, those countries that cannot demonstrate that the food they produce is free of potentially hazardous chemicals will be greatly disadvantaged or even subject to sanctions in the international marketplace. The goal of a total diet study (TDS) is to provide basic information on the levels and trends of exposure to chemicals in foods as consumed by the population. In other words, foods are processed and prepared as typical for a country before they are analyzed in order to better represent actual dietary intakes. Total diet studies have been used to assess the safe use of agricultural chemicals (e.g., pesticides, antibiotics), food additives (e.g., preservatives, sweetening agents), environmental contaminants (e.g., lead, mercury, arsenic, cadmium, PCBs, dioxins), processing contaminants (e.g., acrylamide, polycyclic aromatic hydrocarbons, chloropropanols), and natural contaminants (e.g., aflatoxin, patulin, other mycotoxins) by determining whether dietary exposure to these chemicals are within acceptable limits. Total diet studies can also be applied to certain nutrients where the goal is to assure intakes are not only below safe upper limits, but also above levels deemed necessary to maintain good health. International and national organizations, such as the World Health Organization, the European Food Safety Agency and the US Food and Drug Administration recognize the TDS approach as one of the most cost-effective means of protecting consumers from chemicals in food, for providing essential information for managing food safety, including food standards, and for setting priorities for further investment and study. Total Diet Studies introduces the TDS concept to a wider audience and presents the various steps in the planning and implementation of a TDS. It illustrates how TDSs are being used to protect public health from chemicals in the food supply in many developed and developing countries. The book also examines some of the applications of TDSs to specific chemicals, including contaminants and nutrients.
