Book excerpt: Japan imports large amounts of beef, primarily from Oceania and North America, and its consumers are willing to pay a premium for heavily marbled, grain-fed beef. Trade bans resulting from the discovery of bovine spongiform encephalopathy (BSE) in North America shifted beef supplies to imported beef from Australia and New Zealand. Beef consumption in Japan may increase from current levels in Japan¿s market, particularly if prices fall or income rises. Economic factors, demographic factors, import and domestic policies and regulations, as well as consumer tastes and preferences, will determine the outlook for beef consumption in Japan and the ability of U.S. beef to compete in that market. Available in PDF, EPUB and Kindle. Book excerpt: The Japanese beef industry is quite complex. Cow-calf farms produce calves and feedlots raise the calves to fatten beef cattle. Furthermore, in Japan, the consumption share of the beef of dairy cattle is higher than that of beef cattle. The import liberalization that began in 1991 strongly affects the beef market, and the developments in the beef industry of the U.S.A. and Australia are important matters for Japanese beef production strategy. In this research, first, farm models are developed. The models are comprised of the Wagyu (Japanese domestic beef cattle) cow-calf farm model, the Wagyu feedlot model, and the dairy farm model. Second, for investigating the demand for dressed carcasses of domestic beef cattle and beef imports, the wholesaler model is developed. Third, the consumer demand model that depends on a two-stage budget allocation is developed. In this model, the demand of beef, pork, and chicken is analyzed. Fourth, the supply and demand model of Japanese beef is developed, building on the farm, wholesaler, and consumer models. The model is used to estimate the impact of a change in consumer expenditures and in the domestic beef price of the U.S.A. Finally, the calf price stabilization scheme is analyzed by using both a comparative static model and the supply and demand model. In the comparative static model, elasticities that were estimated in the farm and wholesaler models are used. The simulation results of the supply and demand model show that an increase in consumer expenditures mainly affects imported beef from the U.S.A.A change in domestic beef prices in the U.S.A. strongly affects the U.S.A. wholesale beef price but weakly affects the Japanese beef industry. The estimated impact of the calf price stabilization on the calf market and investment is large, but the impact on the market for cattle and dressed carcasses is small. Results of the supply and demand model show that the change in the investment affects cattle and meat market two to five years later.

Book excerpt: “Olmsted makes you insanely hungry and steaming mad--a must-read for anyone who cares deeply about the safety of our food and the welfare of our planet.” —Steven Raichlen, author of the Barbecue! Bible series “The world is full of delicious, lovingly crafted foods that embody the terrain, weather, and culture of their origins. Unfortunately, it’s also full of brazen impostors. In this entertaining and important book, Olmsted helps us fall in love with the real stuff and steer clear of the fraudsters.” —Kirk Kardashian, author of Milk Money: Cash, Cows, and the Death of the American Dairy Farm You’ve seen the headlines: Parmesan cheese made from wood pulp. Lobster rolls containing no lobster at all. Extra-virgin olive oil that isn’t. So many fake foods are in our supermarkets, our restaurants, and our kitchen cabinets that it’s hard to know what we’re eating anymore. In Real Food / Fake Food, award-winning journalist Larry Olmsted convinces us why real food matters and empowers consumers to make smarter choices. Olmsted brings readers into the unregulated food industry, revealing the shocking deception that extends from high-end foods like olive oil, wine, and Kobe beef to everyday staples such as coffee, honey, juice, and cheese. It’s a massive bait and switch in which counterfeiting is rampant and in which the consumer ultimately pays the price. But Olmsted does more than show us what foods to avoid. A bona fide gourmand, he travels to the sources of the real stuff to help us recognize what to look for, eat, and savor: genuine Parmigiano-Reggiano from Italy, fresh-caught grouper from Florida, authentic port from Portugal. Real foods that are grown, raised, produced, and prepared with care by masters of their craft. Part cautionary tale, part culinary crusade, Real Food / Fake Food is addictively readable, mouthwateringly enjoyable, and utterly relevant.

Book excerpt: An insightful and engaging insider’s look at the history and business of the meat industry, from master butcher Pat LaFrieda "A full-throated celebration of red meat from one of the nation’s major purveyors. . . . The true meat of his book is a study of how beef is brought from farm to table as well as an account of commercial success that deserves a place on any business school syllabus." -- Kirkus Reviews It all began when Pat LaFrieda’s great-grandfather Anthony LaFrieda decided to pack up and move his family from Italy to New York in search of a better life, setting up the family’s first retail butcher shop in 1922 in Flatbush, Brooklyn. Almost one hundred years later, Pat LaFrieda, a fourth-generation butcher and third-generation meat purveyor, is at the helm of a family-run business that has been providing meat to customers for decades, through wars, the Great Depression, the tumultuous years when New York City was dubbed “Fear City,” the fall of the Twin Towers, unprecedented hurricanes, and even a pandemic. Most people don’t know the amount of time, commitment, and extenuating work that goes into bringing them the piece of meat on their plate. What are the real implications of grass-fed beef on climate change? What is involved in humanely processing animals at harvesting facilities? Why is grading, labeling, and traceability essential for the consumer? And what’s the beef with eating meat? There are two sides to every story; however, in the beef industry’s case, only one side seems to get most of the airtime. In Glorious Beef, LaFrieda shares his family's legacy and pulls back the curtain to reveal a behind-the-scenes view of each stage of the process involved in bringing beef from pasture to plate and the truths behind the industry’s story of survival and constant evolution.

Book excerpt: Japanese beef consumption has been buffeted by severe shocks for over 15 years. As both a competitor of U.S. imported beef and a purchaser of U.S. Feedstuffs, Japanese beef production has also suffered setbacks. As a result of the discovery of bovine spongiform encephalopathy (BSE), U.S. beef was completely banned from Japan's market in 2004 and has had only limited access since. In the aftermath of the BSE-related shocks that have affected consumption, production, and trade, a review of the entire Japanese beef market may provide insight into the potential for growth in Japanese beef consumption. It may also reveal the extent to which future Japanese beef production can satisfy a share of consumption and remain a market for U.S. feedstuffs and what the current and future role of U.S. beef might be in satisfying Japanese consumption.

Book excerpt: Meat eating is often a contentious subject, whether considering the technical, ethical, environmental, political, or health-related aspects of production and consumption. This book is a wide-ranging and interdisciplinary examination and critique of meat consumption by humans, throughout their evolution and around the world. Setting the scene with a chapter on meat’s role in human evolution and its growing influence during the development of agricultural practices, the book goes on to examine modern production systems, their efficiencies, outputs, and impacts. The major global trends of meat consumption are described in order to find out what part its consumption plays in changing modern diets in countries around the world. The heart of the book addresses the consequences of the "massive carnivory" of western diets, looking at the inefficiencies of production and at the huge impacts on land, water, and the atmosphere. Health impacts are also covered, both positive and negative. In conclusion, the author looks forward at his vision of “rational meat eating”, where environmental and health impacts are reduced, animals are treated more humanely, and alternative sources of protein make a higher contribution. Should We Eat Meat? is not an ideological tract for or against carnivorousness but rather a careful evaluation of meat's roles in human diets and the environmental and health consequences of its production and consumption. It will be of interest to a wide readership including professionals and academics in food and agricultural production, human health and nutrition, environmental science, and regulatory and policy making bodies around the world.
