However, many questions arise on whether the benefits outweigh the risks, or vice versa. Recent legislative developments in the European Union and USA, recommendations by the World Health Organization, initiatives taken by the food chain, and consumer concerns all point to a widespread (voluntary) removal of antibiotic feed additives for animal growth promotion. In particular, Regulation (EC) 1831/2003 lays down provisions phasing out the authorisations of AGPs in the European Union as from 1 January 2006. This book discusses how this will affect the use/non-use practice of AGPs. Attention is given to the current status and rational design of developments and strategies for animal feeding without the inclusion of AGPs. Topics covered include benefits and risks of AGPs, risk assessment, consumer concerns and demands, regulatory aspects and international developments, mode of action and innovative alternatives, and recent advances in the analysis of AGPs and related products. Book excerpt: The practice of supplementing direct fed microbial and prebiotic additives to domestic animals during growth is becoming more widespread in food animal production. Beneficial effects particularly in cattle, pigs and poultry, including improved general health, foodborne pathogen reduction, more efficient food utilization, faster growth rate and increased milk and egg production are common results. The success associated with direct fed microbial and prebiotic applications in multiple species ensures their continued commercialization and the widespread use of such additives. However, several fundamental questions remain about how and why probiotic products work, and which kind of probiotic products are best for specific production scenarios. It appears that early establishment and retention of an ecological balance in the gastrointestinal tract is an important first step for an external biological additive to be effective in young animals. Therefore, it is possible that the effectiveness of direct fed microbials and prebiotics in some animal species may only be an indirect consequence of speeding up the establishment and succession of the dominant microflora characteristic of the adult gastrointestinal tract. Consequently, an understanding of the key processes during establishment of microflora in the gastrointestinal system that lead to the subsequent fermentation characteristics and ecological balance exhibited by the highly protective microflora is needed. Several additional areas of future research directions are also suggested for further development and implementation of these biological approaches as new molecular and drug delivery technologies become available. Continued research on direct fed microbials and prebiotics in general should markedly expand their commercial applications.

These fervent questions in gastrointestinal microbiology are still, for the most part, unanswered when it comes to what decisively influences pig host nutrition and health: the individual bacterial species of the porcine mucosal gastric and small intestinal microbiota. Lactic acid-producing bacteria in syntrophism with lactic acid-fermenting bacteria, i.e. communities of 'lactic acid-related bacteria' (LARB), constitute the predominant and generally most beneficial part of this microbiota. The present book gives answers to the aforesaid questions. Outlined in six major chapters, the book starts off by reviewing the microecology of the pig proximal gastrointestinal tract as well as the different groups of LARB (chapter II). Thousands of Americans die each year from food-borne illnesses, and millions more get sick. Tremendous strides have been made to reduce the incidence of food-borne diseases originating from animal-derived foods, but food safety and food-borne pathogens continue to remain problematic throughout the world. Food-safety scientists from around the nation continue to conduct groundbreaking research not only to understand causative factors in food-borne pathogen prevalence but to develop novel intervention strategies for limiting contamination in all phases of food animal production. The twenty-four essays in this book highlight research efforts of researchers from the tristate Food Safety Consortium established in 1988 by Congress as a research alliance of food-safety scientists at the University of Arkansas, Iowa State University, and Kansas State University. Members of the consortium conduct research through an annual grant approved by Congress and administered by the U.S. Department of Agriculture. Its mission is to conduct extensive investigation into all areas of poultry, beef, and pork meat production, from the farm to the consumer’s table. In addition to the consortium researchers, collaborative university researchers, government officials, and industry personnel provide timely reviews of their latest findings with regard to five significant subject areas: preharvest food-borne pathogen ecology and intervention strategies, postharvest food-borne pathogen ecology, rapid methods and detection strategies for food-borne pathogens, antibiotics and antimicrobials in food safety, and emerging issues in food safety. Progress in these research areas provides opportunities to further enhance protection of animal-derived foods from farm to fork.
