Available in PDF, EPUB and Kindle. Book excerpt: The Institute of Food Technologists (IFT) recently endorsed the use of computers in food science education. The minimum standards for degrees in food science, as suggested by IFT,"require the students to use computers in the solution of problems, the collection and analysis of data, the control processes, in addition to word processing."Because they are widely used in business, allow statistical and graphical of experimental data, and can mimic laboratory experimentation, spreadsheets provide an ideal tool for learning the important features of computers and programming. In addition, they are ideally suited for food science students, who usually do not have an extensive mathematical background. Drawing from the many courses he has taught at UC Davis, Dr. Singh covers the general basics of spreadsheets using examples specific to food science. He includes more than 50 solved problems drawn from key areas of food science, namely food microbiology, food chemistry, sensory evaluation, statistical quality control, and food engineering. Each problem is presented with the required equations and detailed steps necessary for programming the spreadsheet. Helpful hints in using the spreadsheets are also provided throughout the text. Key Features * The first book to integrate speadsheets in teaching food science and technology * Includes more than 50 solved examples of spreadsheet use in food science and engineering * Presents a step-by-step introduction to spreadsheet use * Provides a food composition database on a computer disk

Available in PDF, EPUB and Kindle. Book excerpt: Evidence-based practice is a paradigm that originated within healthcare but is rapidly migrating to other fields. It involves applying the results from rigorous research studies to professional practice in order to improve the quality of services to clients. Familiarity with these methods has caused an increasing number of information professionals to turn a critical eye to their own practice. Is it possible to adapt this model to librarianship and information work? To what extent are its skills and techniques transferable to the various areas of professional practice? Is it desirable for information professionals to integrate research findings into their day-to-day decision-making? These and other related issues are discussed in this book, the first to examine this key topic in depth. It is divided into three parts: The Context for Evidence-based practice; Skills And Resources for Evidence-based Information Practice; and Using the Evidence Base in Practice. This last part explores each of the six domains of evidence-based librarianship identified in research, to demonstrate the application of evidence-based information practice in a practical decision-making context. These chapters with their associated Special Topics present concise summaries of evidence-based information practice within generic areas of work, together with practical examples of the application of evidence-based principles and methods. Supported by a wealth of case studies drawn from a wide range of sectors, these contributions from leading-edge professionals cover the following key issues: why evidence-based information practice? a brief history of evidence-based practice how good is the evidence base? why don't librarians use research? formulating answerable questions identifying sources of evidence and searching the LIS literature appraising the evidence applying evidence to everyday practice and evaluating your performance disseminating the lessons of evidence-based practice examining the evidence base for reference services and enquiry work the contribution of evidence-based practice to educational activities towards evidence-based management evidence-based perspectives on information access and retrieval introducing an evidence-based approach to marketing and promotional activities. Readership: This book is of wide interest to all new and established information professionals, both those in fields such as healthcare where the evidence-based paradigm is already impacting on their work, and those in other fields encountering it for the first time. It is a core text in departments of library and information work.

Book excerpt: This book is the first anthology of perspectives on the future of text, one of our most important mediums for thinking and communicating, with a Foreword by the co-inventor of the Internet, Vint. Cerf and a Postscript by the founder of the modern Library of Alexandria, Ismail Serageldin. In a time with astounding developments in computer special effects in movies and the emergence of powerful AI, text has developed little beyond spellcheck and blue links. In this work we look at myriads of perspectives to inspire a rich future of text through contributions from academia, the arts, business and technology. We hope you will be as inspired as we are as to the potential power of text truly unleashed. Available in PDF, EPUB and Kindle. Book excerpt: Mastering alternative models of teaching helps build competence and effectiveness in the repertoire of classroom teachers. However, because the attainment of new skills does not by itself ensure transfer to classroom use, teacher training programs should incorporate study of the transfer process itself, reinforced by team effort. Accordingly, strategies are suggested for a collaborative approach to teacher development, involving continuous training and study of both the academic substance and the craft of teaching. Chapter 1 of this inquiry concerns the need to integrate research and practice in learning to teach. Chapter 2 distinguishes between "horizontal transfer" (a direct shift of skill from training to actual use) and "vertical transfer" (the adaptation of skills to fit conditions of the workplace). Chapter 3 concerns attacking the transfer problem by controlling the context of the workplace. Chapter 4 concerns ways of making training more effective: forecasting the transfer problem, overlearning skills, peer coaching, and "executive control." The latter, a key concept, refers to developing a functional and adaptive understanding of a given model. Chapter 5, "Parallels with Athletic Training," is an interview with Coach Rich Brooks of the University of Oregon, focusing on acquisition and incorporation of new skills. Chapter 6 reviews basic principles for increasing learning aptitude and stresses the importance for teachers of continual growth. An appendix reviews the essential literature on teacher training.
