Book excerpt: The Nordic countries have collaborated in setting guidelines for dietary composition and recommended intakes of nutrients for several decades through the joint publication of the Nordic Nutrition Recommendations (NNR). This 5th edition, the NNR 2012, gives Dietary Reference Values (DRVs) for nutrients, and compared with earlier editions more emphasis has been put on evaluating the scientific evidence for the role of food and food patterns contributing to the prevention of the major diet-related chronic diseases. Recommendations on physical activity are included and interaction with physical activity has been taken into account for the individual nutrient recommendations wherever appropriate. A chapter on sustainable food consumption has been added. A Nordic perspective has been accounted for in setting the reference values.The NNR 2012 has used an evidence-based and transparent approach in assessing associations between nutrients and foods and certain health outcomes. Systematic reviews form the basis for the recommendations of several nutrients and topics, while a less stringent update has been done for others. The systematic reviews and individual chapters have been peer reviewed and the systematic reviews are published in the Food & Nutrition Research journal. The draft chapters were subject to an open public consultation. Recommendations have been changed only when sufficient scientific evidence has evolved since the 4th edition. The primary aim of the NNR 2012 is to present the scientific background of the recommendations and their application. Billings notes in his chapter in this book. the development of physiological ecology can be traced back to the very beginnings of the study of ecology it is clear that the modern development of this field in North America is due in the large part to the efforts of Billings alone. The foundation that Billings laid in the late 1950s came from his own studies on deserts and subsequently arctic and alpine plants, and also from his enormous success in instilling enthusiasm for the field in the numerous students attracted to the plant ecology program at Duke University. Billings' own studies provided the model for subsequent work in this field. Physiological techniques. normally confined to the laboratory. were brought into the field to examine processes under natural environmental conditions. These field studies were accompanied by experiments under controlled conditions where the relative impact of various factors could be assessed and further where genetic as opposed to environmental influences could be separated. This blending of field and laboratory approaches promoted the design of experiments which were of direct relevance to understanding the distribution and abundance of plants in nature. Physiological mechanisms were studied and assessed in the context of the functioning of plants under natural conditions rather than as an end in itself.

Adopting a realist ontology and taking a comparative case approach, Families and Food in Hard Times addresses the global problem of economic retrenchment and how those most affected are those with the least resources. Based on research carried out with low-income families with children aged 11-15, this timely book examines food poverty in the UK, Portugal and Norway in the decade following the 2008 financial crisis. It examines the resources to which families have access in relation to public policies, local institutions and kinship and friendship networks, and how they intersect. Through ‘thick description’ of families’ everyday lives, it explores the ways in which low income impacts upon practices of household food provisioning, the types of formal and informal support on which families draw to get by, the provision and role of school meals in children’s lives, and the constraints upon families’ social participation involving food.
