Parts II, III, IV, and V deal with various novel processing technologies, including impingement processing technologies, electro-magnetic processing technologies, physico-mechanical processing technologies, and electro-technologies. Part VI introduces chemical processing technologies. Part VII comprise irradiation processing technology, and the final part is focused on biological processing technology, detailing the application of enzymes in food processing. Numerous studies were carried out to find the impact of these processing technologies on various aspects of food and associated health promotion properties. Both positive and negative results were obtained based on nature of foods, processing type, and duration of processing, and this book covers these results in depth.

En la presente obra se presentan, de forma didáctica, algunas tecnologías emergentes que en la actualidad son importantes para la industria alimentaria, puesto que permiten mejorar las características de los productos, al tiempo que son más respetuosas con el medio ambiente. Para la conservación de los alimentos, pueden seguirse procesos no térmicos utilizando alta presión hidrostática, pulsos eléctricos de alta intensidad de campo o la irradiación, entre otros. Estos tres sistemas, que se abordan en los capítulos 2, 3 y 4 del libro, se perfilan como los de mayor interés. Para la obtención de componentes y extractos cada vez más puros, en el capítulo 5 se presenta la extracción con fluidos supercríticos como técnica que permite separar componentes de los alimentos y que supone un gran potencial para la industria alimentaria. El capítulo 6 trata de la tecnología de membranas, que ya viene aplicándose en varias industrias, aunque todavía presenta un componente importante de innovación. Finalmente, esta obra también pretende constituirse en un espacio de reflexión para la industria alimentaria sobre las posibilidades que estas tecnologias ofrecen actualmente y sobre cuáles serán las tendencias futuras de la tecnología de los alimentos, aspecto que se aborda en el último capítulo del libro.
