Para identificar la situación actual de la empresa y área se hizo uso del mapa de flujo de valor (VSM), diagrama de análisis de operaciones y diagrama Ishikawa; y para dar solución a los problemas detectados se aplica herramientas metodológicas lean: 5´S y layout teniendo en cuenta los antecedentes de estudio. Logrando de tal forma, reducir la distancia recorrida en el flujo de elaboración de queso fresco y el tiempo recorrido, por otro lado, se logró incrementar el nivel de cumplimiento de las 5’S. Finalmente, la empresa de lácteos aumento su productividad, comprobándose con la prueba estadística de T Student.
