Tali strumenti sono riconducibili al più generale sistema di programmazione e controllo, o controllo di gestione: con esso si possono prefissare gli obiettivi da conseguire sulla scorta di un sottostante disegno strategico, formalizzare le conseguenti operazioni da svolgere, nonché sottoporre al vaglio i risultati ottenuti in modo da verificare se quanto era stato previsto è stato mantenuto e al tempo stesso apportare i necessari correttivi qualora ci siano state delle divergenze tra consuntivo e preventivo. Il volume propone un percorso logico-sequenziale che parte dalla identificazione e inquadramento della produzione e vendita di un servizio alberghiero e prosegue con l’illustrazione di una serie di tecniche contabili e non, utilizzabili a tale scopo, per finire poi con l’analisi degli strumenti più evoluti applicabili al controllo di gestione nell’impresa alberghiera. Il fine ultimo è di fornire a chi opera in questo ambito uno strumento utile a migliorare la conoscenza di tali aziende e quindi a trarre da esse un maggiore profitto. STRUTTURA 1. Il lavoro si apre ponendo l'attenzione ai modelli dinamici, dedicando un'ampia parte al concetto di pianificazione. Nei capitoli successivi si introducono i principali punti di attenzione relativi alla produzione in serie mediante un'analisi tecnica della definizione del contesto operativo, della valutazione delle opzioni strategiche e dell'impostazione del budget. Una ulteriore parte è dedicata al disegno della mappa delle responsabilità e alla verifica dell'accordo organizzativo. La trattazione poi si focalizza sulla produzione in serie con l'analisi delle caratteristiche organizzative e tecniche, degli elementi fondamentali alla realizzazione di una valida contabilità analitica: aspetti economici e finanziari da gestire nelle aziende di produzione, variabili chiave, obiettivi economici e parametri di controllo. Nell'ultima parte del libro saranno analizzati i modelli di budget e le caratteristiche di riferimento, la costruzione dei parametri e del budget annuale e il complesso insieme degli indicatori di riferimento per l'analisi e l'interpretazione degli scostamenti. In chiusura vengono proposte esemplificazioni di parametri di controllo e viene illustrata la tecnica di "balanced scorecard" che consente di controllare variabili qualitative e quantitative. Vavilov. He was undoubtedly the first scientist to understand the impor tance for humankind of conserving for utilization the genetic diversity of our ancient crop plants and their wild relatives from their centres of diversity. His collections showed various traits of adaptation to environ mental extremes and biotypes of crop diseases and pests which were unknown to most plant breeders in the first quarter of the twentieth cen tury. Later, in the 1940s-1960s scientists began to realize that the pool of genetic diversity known to Vavilov and his colleagues was beginning to disappear. Through the replacement of the old, primitive and highly diverse land races by uniform modem varieties created by plant breed ers, the crop gene pool was being eroded. The genetic diversity of wild species was equally being threatened by human activities: over-exploita tion, habitat destruction or fragmentation, competition resulting from the introduction of alien species or varieties, changes and intensification of land use, environmental pollution and possible climate change.
