Available in PDF, EPUB and Kindle. Book excerpt: The term “gastrocracy” refers to the appropriation of discourses and practices related to the sourcing, preparation, distribution, and consumption of food for political purposes. The intersections of gastronomy and governance, dating in Spain to the last quarter of the nineteenth century, have become highly visible over the past decade, when political debates around nationalism in its different forms have taken the guise of discussions about regional and local cuisines. Concomitant with the rise of the “slow food” movement and following UNESCO’s addition in 2011 of “Gastronomic Meal of the French” to its list of Intangible Cultural Heritage of Humanity, public and private associations all around Spain have been established with the goal of achieving recognition by UNESCO for Spanish, Catalan, and other national cuisines. In 2016, Gastro Marca España—an association and a web portal—was launched to raise the profile of food in Spain’s national brand. Eliciting wide public participation, co-opted for political purposes, regarded as a factor of economic development on any scale, and integrated into every so-called banal nationalism, the production, distribution, and consumption of food are highly relevant for historical analysis. Seeking to encourage a broader discussion about Peninsular gastrocracies, this book brings together an interdisciplinary group of scholars from different sides of the Atlantic and the Pacific who have spearheaded research on gastronomy and governance in Spain.

Available in PDF, EPUB and Kindle. Book excerpt: Degrowth in tourism is the voluntary shift to rebuild destinations and local economies in a way in which consumption, production and the exploitation of resources are minimal. It looks to ensure that the direction of institutional changes and the orientation of technological development are controlled and in harmony with the environment. Degrowth involves people whose use of personal time enhances the richness of the tourism experience through travelling less frequently, more slowly and in a low carbon way; taking time to support the environment, the local economy and to explore the local culture. Despite the significant role degrowth can play in destination development, it has rarely been examined from a tourism studies perspective. This book takes steps to address the paucity of combined research on tourism and degrowth by presenting emergent knowledge and research on this increasingly important concept.

Available in PDF, EPUB and Kindle. Book excerpt: This book is a collection of research focusing on the anthropological aspects of how food is made in modern society from both global and local perspectives. Modern food consumed in any society is created in a variety of natural and cultural environments. There is a "food democracy" in which how we procure and share food can be an indicator of our participation in society, while food nurtured in particular climates and land can be transmitted to the outside world owing to the influence of tourism and the global economy, a phenomenon that is recognized on a global scale as exemplified by the UNESCO Intangible Cultural Heritage. In other words, food is an aspect of both culture and civilization. Anthropological approaches are used to reveal the humanistic aspects of food, highlighting the strength and individuality of regional and ethnic foods in global civilizations. The book is a compilation of results from sessions of the international symposium “Making Food in Human and Natural History”, which took place on March 18 and 19, 2019, in Osaka, Japan.
