Book excerpt: Excerpt from Foreign News on Hogs and Pork The advance in British imports of lard for November placed the current figure 16 per cent ahead of last year. Liverpool lard stocks at the end of December were seasonally reduced below figures for earlier months, but the current total is about 27 per cent larger than a year ago. The weakness in Liverpool lard quotations during most of the past pork marketing season was accentuated in November and December with the price averaging during the first half of December. That figure was per cent below the December 1928 average. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Book excerpt: Excerpt from World Hog and Pork Prospects, Vol. 50: January 17, 1934 Hog numbers in Germany at the end of 1933 were estimated to be the largest on record. The increase over a year earlier was 4 percent, but the current estimate is only slightly larger than that at the end of 1931. In the United States a decrease of 3 percent in the 1933 fall pig crop compared with 1932 was indicated by the December Pig Crop report. A decrease was also indicated in the number of sows to farrow in the spring of 1934. Hog prices declined during December in both domestic and foreign markets. The average price for the month in the United States was only slightly higher than the very low level reached in December 1932. Inspected slaughter in this country during the period from October to December 1933 was about the same as a year earlier. Slaughter supplies during the remainder of the winter are expected to be smaller than last year. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Book excerpt: Excerpt from World Hog and Pork Prospects, 1933: Hp-38 to Hp-49 A statistical summary of the hog and pork situation for the first Quarter of the 1932 - 33 marketing year apnears on vage 7 The reduction in the number of hogs slaughtered during the 3-months neriod of 11 per cent was offset in part by an increase of about 4 oer cent in the average dressed weight. Contrary to the usual seasonal tendency, storage holdings of hog products were slightly reduced from the beginning of the period, october 1, 1932 to the end of the period, December 31, 1932. Exports of pork and lard during the 3 - months period were also slibhtly smaller than a year earlier. As a.resu1t of the decline in storage holdings and the reduced exports, the apparent consumption of pork and lard from Federally inspected production from October to December 1932 was only 2 per cent smaller than a.year earlier, although the reduction in the tdtal dressed weiéht of hog slaughter Was about 7 per cent. Lard production per 100 pounds of live weight during the first Quarter of the current marketing gear Was larger than last year and larger than the 5-year average, but the total lard production under Federal inspection has 3 per cent smaller than last year, because of the relatively greater reduction in hog slaughter. As a result of the reduction in storage holdings of lard and the smaller exports, the apparent consumption of lard from October to December was about 2 per cent larger than in the corresponding period in 1931. Book excerpt: Excerpt from Price Spreads for Pork Since the days when the Midwest was the agricultural frontier of a new and expand ing Nation, hog and pork production have been important agricultural enterprises. Hog production developed along with the remarkable productive capacity of the Corn Belt, providing the framework for the early Corn Belt economy. There was a ready market for pork, both fresh and cured. Lard was the commonly used cook ing fat; ham and bacon, at first delicacies, became the standard American breakfast; and cured or salted pork were standard provision for the military and other world travelers. Pork was more than a staple-the meat was prized. Pork loin even symbolized good eating in the well-known phrase, eating high on the hog. In this century, other products have re placed lard as the primary cooking fat beef has replaced some pork on consumers tables; fresh, frozen, and cured meats of many varieties are available to travelers and, in general, dietary preferences are for less pork than before. However, in spite of the decrease in the demand for pork, as much as half the total corn production is fed to hogs today. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Feeding Hogs in the South It is sometimes claimed that hogs can not be raised and finished at a profit in the South since corn has advanced in price. The farmer is often told that he can buy his pork cheaper than he can make it. While pork has not advanced in price as rapidly as has corn, still it must be remembered that the cheapest side meat costs the consumer from 14'to 15 cents a pound, and that the shoulders and hams cost from 18 to 22 cents a pound. It Is no doubt true that the southern farmer who imitates his northern brother in his pork-making opera tions could buy the meat cheaper than he could make it. But if he takes his own conditions as he finds them and uses these conditions intelligently, he can produce pork cheaper than it is possible to pro duce it in other sections. But he can not compete with those por tions of the country where corn is comparatively cheap if he also feeds corn alone. The southern farmer must economize in the use of this feed on account of its high price. The South, in fact, feeds too much corn, as a sole feed, to-hogs; there are cheap feeds which should be used along with corn.
