The Standard and other papers when noticing my article on Corn Stores for War Time, in the Nineteenth Century for February, 1896, said it was a result of the recent threats of war from America and Germany. B., I inscribe this book, knowing that in him it will find one sympathetic reader. My interest in food supply statistics, and in agricultural economics generally, extends over nearly forty years, and it has been my good fortune to have opportunities of continuing, and, in some degree, supplementing the pioneer work in this field, for which Major Craigie's name is known throughout the world. The influence which, mainly on his initiative, the International Statistical Institute exercised in formulating general principles for the collection of statistics of agricultural production has been, in more recent years, reinforced by the specialised and systematic work of the International Agricultural Institute. There still remain many gaps to be filled and many defects to be remedied before statistics of the world's food supplies attain completeness. Book excerpt: Excerpt from Food Economy in War Time But to all classes, even to the wealthy, it is now more important than it would be under ordinary circumstances to watch the markets. If an article of food of which the price is falling (or rising but slowly) be purchased rather than a similar or comparable article of which the \price is quickly rising, the supply and consumption of our various foodstuffs will be more equably adjusted, and this circumstance will in itself make for national economy. But as we have said those who are prepared to make altera tions in their consumption of food in order to conform with the urgent national needs of the moment may require information as to how far such alterations, whether of degree or of kind, can be made without danger to health and efficiency. Before presenting tables which are intended to show the relative cost of equivalent nutritive values when purchased in the form of different foods, we give therefore a brief account of the function of food in general and of the special importance of its individual constituents. Book excerpt: Excerpt from Food Supplies in Russia During the World War; Organization and Policy; Food Prices and the Market in Foodstuffs: Russian Series Fortunately such an alternative was at hand in the narrative, amply supported by documentary evidence, of those who had played some part in the conduct of affairs during the War, or who, as close observers in privileged positions, were able to record from first or at least second-hand knowledge the economic history of different phases of the Great War, and of its effect upon society. Thus a series of monographs was planned consisting for the most part of unofficial yet authoritative statements, descriptive or historical, which may best be described as about halfway between memoirs and blue-books. These monographs make up the main body of the work assigned so far. They are not limited to contemporary war-time studies; for the economic history of the War must deal with a longer period than that of the actual fighting. It must cover the years of deflation as well, at least sufficiently to secure some fairer measure of the economic displacement than is possible in purely contempo rary judgments. Book excerpt: Excerpt from Food in War Time If one takes a pint of whole milk daily, or even, as we have seen, cabbage or beet-tops in its stead, one may take fat in the forms of olive oil or cottonseed oil, corn oil, cocoanut oil, peanut butter, or in other yege table oils, without possible prejudice to health. Osborne and Mendel, and more recently Halliburton, have pointed out that oleomargarine as prepared from beef - fat contains the fat-soluble growth-promoting accessory substance or vitamine which is present in butter-fat, but which is not contained in vegetable oils or in lard. Halliburton and Drummond summarize the practical results of their work as follows: But when we approach the subject of the dietary of the poorer classes, the question is a more serious one. In ordinary times the consumption of beef dripping, which is considerable among the poor, would to a large extent supply the lacking properties of a vegetable-oil margarine. But at the present time beef itself is expensive, and the Opportunities of obtaining dripping are there fore minimized. At the same time the three important foods for children already enumerated (milk, butter, eggs) have risen in cost, so as to be almost prohibitive to those with slender incomes. The vegetable-oil margarines still remain comparatively cheap, and the danger is that unless measures are taken to insure a proper milk supply for infants at a reasonable charge, these infants may run the risk Of being fed, so far as fat is concerned, entirely upon an inferior brand of margarine, destitute of the growth-promoting accessory substance. It would be truer economy even for the poor to purchase smaller quantities of an oleo-oil margarine if they cannot afford the luxury of real butter. The legal restrictions placed upon the sale of oleo margarine and the taxes enhancing its cost, now in operation in many of our states, are without warrant in morals or common sense and should be entirely abolished in times like these. A well made brand of oleomargarine is much more palatable than butter of the second grade, and certainly for cooking purposes is just as valuable. Book excerpt: Excerpt from The Gleaner: September, 1943 It is almost trite to talk again about the importance of food pro duction in the winning of the war. Yet every wartime broadcast from Washington, every pronouncement of the President of the United States re-emphasizes the vital necessity of keeping up our food supply. Civilian comfort and convenience are basic to civilian morale. We have only to look at the apparent distress caused our population by the exigencies of food rationing, which limits but does not deprive anyone of anything; or to view the effect of shortage of beef, butter and a few other food items, even though we are in the midst of comparative plenty of other essential foods, sufficient in content and amount to meet every real requirement. Can we visualize the situation in so many parts of the world where real need for food exists? Even in a comparatively prosperous country like England the civilian population is alloted one egg a month. Picture the scorched earth of Poland, the destitution of China, the starvation of India, of Spain, of other European countries that have been bled white by their conquerors and masters. Available in PDF, EPUB and Kindle. Book excerpt: The battle to keep the nation fed during the Second World War was waged by an army of workers on the land and the resourcefulness of the housewives on the Kitchen Front. The rationing of food, clothing and other substances played a big part in making sure that everyone had a fair share of whatever was available. In this fascinating book, Katherine Knight looks at how experiences of rationing varied between rich and poor, town and country, and how ingenuous cooks often made a meal from poor ingredients. Charting the developments of the rationing programme throughtout the war and afterwards, Spuds, Spam and Eating for Victory documents the use of substitutions for luxury ingredients not available, resulting in delicacies such as carrot jam and oatmeal sausages. The introduction of Spam in America in the forties led to this canned spiced pork and ham becoming an iconic symbol of the worse period of shortage in the twentieth century. Seventy years after the outbreak of the Second World War, this book listens to some of the people who were young during the conflict share their memories, both sad and funny, of what it was like to eat for Victory.
