Book excerpt: Excerpt from Food Economy in War Time But to all classes, even to the wealthy, it is now more important than it would be under ordinary circumstances to watch the markets. If an article of food of which the price is falling (or rising but slowly) be purchased rather than a similar or comparable article of which the \price is quickly rising, the supply and consumption of our various foodstuffs will be more equably adjusted, and this circumstance will in itself make for national economy. But as we have said those who are prepared to make altera tions in their consumption of food in order to conform with the urgent national needs of the moment may require information as to how far such alterations, whether of degree or of kind, can be made without danger to health and efficiency. Before presenting tables which are intended to show the relative cost of equivalent nutritive values when purchased in the form of different foods, we give therefore a brief account of the function of food in general and of the special importance of its individual constituents. Book excerpt: Excerpt from The Food Question This book was planned before Food Conservation was by the mass considered seriously. The writers of the various articles are thoroughly qualified to speak where they have spoken. They are practical, conscientious, Christian, and have at heart the best in the needs of humanity. Every one strikes a major chord in the song of healthful, economical living. The recipes are from the author of "Food and Cookery," who has had a score of years' experience in every station and phase of the preparation of food, under French, English, German, and Spanish chefs. He has been second cook in the Calumet Club of Chicago, the California Club, Los Angeles, and in many leading hotels in various cities. For ten years, he has given his best thought and study to the preparation of the best in food, scientific, palatable, wholesome, and economic, most of this time in the Sanitarium and College of Medical Missionaries, Loma Linda, California. Special attention is called to the valuable tables of Food Elements, and to the newly demonstrated values of vita-mines and the substances which destroy them. We are grateful for the kind word spoken by Dr. Ray Lyman Wilbur, president of Stanford University, and first assistant to Mr. Hoover in the Federal Food Administration Department; also for the help and suggestions of Dr. Newton Evans, president of the College of Medical Evangelists, of Loma Linda, California. The little book will, we believe, not only meet present needs, but be a safe counselor in the years to come. Book excerpt: Excerpt from Food Supplies in Russia During the World War; Organization and Policy; Food Prices and the Market in Foodstuffs: Russian Series Fortunately such an alternative was at hand in the narrative, amply supported by documentary evidence, of those who had played some part in the conduct of affairs during the War, or who, as close observers in privileged positions, were able to record from first or at least second-hand knowledge the economic history of different phases of the Great War, and of its effect upon society. Thus a series of monographs was planned consisting for the most part of unofficial yet authoritative statements, descriptive or historical, which may best be described as about halfway between memoirs and blue-books. These monographs make up the main body of the work assigned so far. They are not limited to contemporary war-time studies; for the economic history of the War must deal with a longer period than that of the actual fighting. It must cover the years of deflation as well, at least sufficiently to secure some fairer measure of the economic displacement than is possible in purely contempo rary judgments. Book excerpt: Excerpt from Food Supplies in Peace and War The invention of mechanical motive power, and the consequent development of regular and rapid means of transport throughout the world, have de-localised food supplies. No longer is any nation doomed to starvation because its harvests fail or pestilence destroys its flocks and herds. All the ends of the earth can contribute to feed those who are in need. The distribution of food is determined not by physical but by economic forces, and so long as the machinery of transportation by land and sea is unhampered, the risk of famine is shared by the whole community of nations. Book excerpt: Excerpt from Food in War Time If one takes a pint of whole milk daily, or even, as we have seen, cabbage or beet-tops in its stead, one may take fat in the forms of olive oil or cottonseed oil, corn oil, cocoanut oil, peanut butter, or in other yege table oils, without possible prejudice to health. Osborne and Mendel, and more recently Halliburton, have pointed out that oleomargarine as prepared from beef - fat contains the fat-soluble growth-promoting accessory substance or vitamine which is present in butter-fat, but which is not contained in vegetable oils or in lard. Halliburton and Drummond summarize the practical results of their work as follows: But when we approach the subject of the dietary of the poorer classes, the question is a more serious one. In ordinary times the consumption of beef dripping, which is considerable among the poor, would to a large extent supply the lacking properties of a vegetable-oil margarine. But at the present time beef itself is expensive, and the Opportunities of obtaining dripping are there fore minimized. At the same time the three important foods for children already enumerated (milk, butter, eggs) have risen in cost, so as to be almost prohibitive to those with slender incomes. The vegetable-oil margarines still remain comparatively cheap, and the danger is that unless measures are taken to insure a proper milk supply for infants at a reasonable charge, these infants may run the risk Of being fed, so far as fat is concerned, entirely upon an inferior brand of margarine, destitute of the growth-promoting accessory substance. It would be truer economy even for the poor to purchase smaller quantities of an oleo-oil margarine if they cannot afford the luxury of real butter. The legal restrictions placed upon the sale of oleo margarine and the taxes enhancing its cost, now in operation in many of our states, are without warrant in morals or common sense and should be entirely abolished in times like these. A well made brand of oleomargarine is much more palatable than butter of the second grade, and certainly for cooking purposes is just as valuable.
