Book excerpt: A quale periodo storico si possono far risalire le prime forme di etichettatura degli alimenti?La prima esigenza di chi etichetta un contenitore che contiene alimenti o bevande, anche nella antichità, è quella di ricordare il contenuto di quel contenitore.In epoca più antica si trovano già regole che hanno riguardato solo alcuni alimenti o bevande tra cui soprattutto il vino, ma che avevano la finalità essenziale di ricordare il contenuto del recipiente in cui erano state poste. Un po' quello che ancora oggi facciamo tra le mura domestiche quando produciamo delle conserve o congeliamo degli alimenti e scriviamo sul contenitore di cosa si tratta con la data di produzione. Gli Egizi per esempio usavano sigillare il contenuto delle anfore con un sigillo di fango che certificava che quella confezione non era stata aperta. Per il vino di solito veniva riportato il luogo di produzione, l'anno di produzione e la zona geografica, ed in qualche occasione, anche il nome del produttore. Questo metodo di etichettatura passò poi ai Greci ed ai Romani.Successivamente l'esigenza primordiale si è via via implementata di tutta una serie di informazioni utili al Consumatore finale di quel prodotto alimentare per permettergli scelte consapevoli nel momento dell'acquisto, della conservazione e nel momento dell'utilizzo. La legislazione attualmente vigente in tutta Europa che disciplina l'etichettatura degli alimenti ha per titolo "Regolamento (UE) n. 1169/2011 del Parlamento europeo e del Consiglio, del 25 ottobre 2011, relativo alla fornitura di informazioni sugli alimenti ai consumatori ......"Applicare questo regolamento non è facile, anche perché fissa regole generali che poi devono accordarsi con altre normative specifiche. Il libro vuole dunque essere prima di tutto un aiuto a tutti i produttori e commercianti di alimenti per effettuare una corretta etichettatura ed evitare le pesanti sanzioni che sono previste in caso di violazione della norma.

There is a need to adopt a transdisciplinary approach to multifunctional agriculture in order to integrate the agroecological paradigm in legal regulation. This does not require a super-law that hierarchically purports to incorporate and supplant the existing legal fields; rather, it calls for the creation of a trans-law that progressively works to coordinate interlegalities between different legal fields, respecting their autonomy but emphasizing their common historical roots in rus in the process. Rus, the rural phenomenon as a whole, reflects the plurality and interdependence of different complex systems based jointly on the land as a central point of reference. “Rural” is more than “agricultural”: if agriculture is understood traditionally as an activity aimed at exploiting the land for the production of material goods for use, consumption and private exchange, rurality marks the reintegration of agriculture into a broader sphere, one that is not only economic, but also social and cultural; not only material, but also ideal, relational, historical, and symbolic; and not only private, but also public. In approaching rus, the natural and social sciences first became specialized, multiplied, and compartmentalized in a plurality of first-order disciplines; later, they began a process of integration into Agroecology as a second-order, multi-perspective and shared research platform. Today, Agroecology is a transdiscipline that integrates other fields of knowledge into the concept of agroecosystems viewed as socio-ecological systems. However, the law seems to still be stuck in the first stage. Following a reductionist approach, law has deconstructed and shattered the universe of rus into countless, disjointed legal elementary particles, multiplying the planes of analysis and, in particular, keeping Agricultural Law and Environmental Law two separate fields.

On the consumer demand side, they include consumers' perceptions of the risks associated with particular food products, how demographic characteristics influence consumers' processing of risk information and subsequent changes in food demand behavior, and the monetary value consumers might place on changes in the risk profiles of products. The economic benefits and costs associated with current food consumption patterns are a major determinant of demand for improved food safety and dietary change through government regulation. While a more complete picture of risks, benefits, and costs has been emerging recently, much is yet unknown.
