Unsaturated fatty acids are desirable end-products of milk production. However, their presence in the rumen can be toxic to ruminal bacteria, which will then decrease digestion. Unsaturated fatty acids are biohydrogenated into saturated fatty acids by specific bacteria in the rumen, which will decrease positive benefits associated with their consumption. Our first study evaluates the efficiency of calcium salts VALFEED 100M and VALFEED 200 in protecting unsaturated fatty acids from biohydrogenation in the rumen and also observes the effects of these 'protected fats' on lactation performance. Twenty-eight Holstein cows in early lactation were divided equally into four different treatment groups: 1) Control (with no supplemental fat); 2) Prilled fat; 3) Calcium salt of VALFEED 100M; 4) Calcium salt of VALFEED 200. Fat supplements were added to diets in place of corn in the concentrate mix at 3.2% of total dry matter intake. Cows were housed in free stalls equipped with Calan gates. The cows were fed twice daily, at 0800 and 1500 in amounts to allow ad libitum consumption. Weekly feed samples were taken and dried in order to calculate daily dry matter intake. Milk production was measured daily, and milk fat and protein content were analyzed at days 30 and 90. Body weights were taken at the beginning (day 0) and the end (day 90) of the trial. The first was to recalculate the temperature-humidity index (THI) using high producing dairy cows under diurnal summer conditions. This re-evaluation confirmed that current THI values underestimate the severity of heat stress levels. Therefore, cooling of dairy cattle during warm summer months should begin at a THI of 68.A second objective involved three studies carried out to evaluate use of niacin in dairy cow rations to improve evaporative heat loss and resistance to heat stress. Niacin is known to cause intense vasodilation in human and lab species. We hypothesized that increasing vasodilation would improve evaporative heat loss in dairy cows. In the first niacin study, supplementation of lactating dairy cows with an encapsulated rumen by-pass form of niacin (NIASHURETM; Balchem Corporation, New Hampton, NY) and proved effective in alleviating some affects of heat stress during mild thermal stress. This was observed through increased evaporative heat loss, increased water intake to support the increased sweating rate, decreased rectal and core temperatures. Past research demonstrated that the possible mechanism for vasodilation affects seen by niacin were most likely due to prostaglandin D secretions. Niacin apparently may act through increased prostaglandin D and E production and secretion by Langerhans cells which then act upon vascular endothelial prostaglandin D receptors to increase vasodilation. Additionally, we and others have now shown that these prostaglandins induced elevated heat shock protein gene expression leading to improved cellular viability under heat stress conditions (42 ðC). No studies have evaluated impact of encapsulated niacin on milk yield and composition during periods of thermal stress under commercial dairy conditions. Therefore, the objective of the last study was to examine the effects of encapsulated niacin during heat stress on milk production and composition as well as core body temperatures under commercial conditions. We concluded that feeding encapsulated niacin did reduce body core temperature but did not increase daily milk yields; however, milk fat and protein percentages were increased thereby, increasing 4% fat- and energy-corrected milk yields significantly when animals were fed encapsulated niacin.

This thesis contains two studies that evaluate the effects of supplemental palmitic (C16:0) and oleic (cis-9 C18:1) acids, and methionine (Met) and lysine (Lys), on lactating dairy cows. The first experiment used a product containing 80% C16:0 + 10% cis-9 C18:1 supplied at 1.5% diet dry matter (DM) and supplemental Met and Lys in low forage diets (LF) and a control diet with no added FA or AA at typical midwestern forage content (CON). Compared with CON, LF increased dry matter intake (DMI), milk fat yield, milk protein yield, energy-corrected milk (ECM) yield, and body condition score (BCS). In the second experiment, different ratios of palmitic (C16:0) and oleic (cis-9 C18:1) acid were supplemented in basal diets containing high CP without supplemental AA (HP) or low CP with supplemental AA (LP). FA treatments were products consisting of 80% C16:0 + 10% cis-9 C18:1 (PA) and 60% C16:0 + 30% cis-9 C18:1 (OA) supplemented at 1.5% diet DM and a non-FA supplemented control diet (CON). No interactions were observed between basal diet and FA treatment for the yields of milk or milk components. Compared with HP, LP decreased milk urea nitrogen and blood urea nitrogen concentrations, and did not impact milk, milk fat, or milk protein yields. FA treatments decreased DMI and increased milk yield, fat yield, ECM yield, and feed efficiency. Results from this work can provide information that can be used as a foundation for future studies and to guide feeding decision to maximize performance and farm income.
