The conference had two objectives: (1) to review the research data on the health effects of polyunsaturated fatty acids in seafoods in terms of the impact of omega-3 fatty acids on eicosanoid formation, thrombosis and inflammation, and the role of docosahexaenoic acid in membrane function and metabolism, and (2) to develop a research agenda to determine the spectrum of the health effects of polyunsaturated fatty acids of seafood origin in the American diet. The 1985 conference established the fact that omega-3 fatty acids of marine origin - eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) - play important roles in prostaglandin metabolism, thrombosis and atherosc1erosis, immunology and inflammation, and membrane function. In response to the conference recommendations, the Congress of the United States provided special funding for the establishment of a "test materials 1aboratory" within the US Department of Commerce to produce under documented quality contr01 the types and quanti ties of omega-3 te~3t materials required by biomedica1 researchers. The forms of test materials to be produced include refined fish oil, polyunsaturated fatty acid enhanced triglycerides, concentrates of esters of fatty acids, purified omega-3 fatty acids, and omega-3 mono-, di- and tri~lyceride mixtures.

We investigated relationships between saturated and unsaturated dietary fat, and antioxidant (retinol, alpha-tocopherol, beta-carotene, iron, zinc, selenium, magnesium and copper) intakes, and blood glucose, lipoproteins and cell membrane fatty acids in a homogenous group of educated, healthy Caucasian men and women. Volunteers (20 to 50 years, men 52, women 52) were recruited from staff and students of London Metropolitan University. Following correction for under-reporting 40 women and 31 men were included in the dietary analysis. The study consisted of four diet periods: a 7-day pre-emperimental period and two 18-day experimental periods separated by an 18-day washout period. Diets supplied 53% of total energy as carbohydrate, 14% as protein and 33% as fat. Added fat accounted for 79% of the total fat or 29% of total energy. A mixture of fats (MF) was provided during the pre-experimental and washout periods. Subjects were randomly assigned to receive two or three experimental diets containing: i) 100% low linolenic canola oil (LLNA), ii) 85% regular canola oil and 15% sunflower oil (CAN), or iii) 67% regular canola oil, 15% flax oil, and 18% sunflower oil (FLAX). The experimental diets provided similar amounts of LA but different amounts of LNA. The LA/LNA ratios and the LNA levels of the diets were 6.3, 4.3 and 2.5, and 4%, 6% and 11% respectively. Fasting 12-hour blood samples were analyzed for plasma lipids and LP. Platelets were isolated from the plasma and the fatty acid composition of the phosphatidylcholine (PC), phosphatidylethanolamine (PE) and alkenylacyl ethanolamine phosphoglyceride (PPE) fractions were determined.
