Effective nutrition education for children should provide them the knowledge and skills to maintain lifelong healthy eating patterns. The use of peers in education and learning may provide a unique channel to impact the lifestyle habits of school age children. Purpose: This pilot study describes and reports on the effectiveness of a peer designed nutrition education program for school age children teaching the importance of eating breakfast, evaluates its ability to increase basic nutrition knowledge and measures its impact upon the peer leaders. Methods: Forty-two second grade students from three classrooms received nutrition intervention from seven teacher-selected fifth graders. These seven fifth graders were trained as peer leaders to design and administer nutrition lessons and related activities over a series of three classes. Second grade students completed an assessment of knowledge, attitude and behavior pre and post intervention. A process evaluation based upon peer leader feedback, direct classroom observation and teacher interviews were completed. Results: Mean score of nutrition knowledge increased (3.52 to 3.67) with peer led nutrition intervention, although not significantly (F=1.086, p=0.348). The program was highly accepted by the peer leaders and classroom involved. Conclusions: This pilot study demonstrated peer-led nutrition education programs in elementary schools are feasible."--Abstract.

National nutrition education curriculum standards could have a variety of benefits, including the following: Improving the consistency and effectiveness of nutrition education in schools; Preparing and training teachers and other education staff to help them provide effective nutrition education; Assisting colleges and universities in the development of courses in nutrition as part of teacher certification and in updating methods courses on how to integrate nutrition education in subject-matter areas in the classroom and in materials; and Establishing a framework for future collaborative efforts and partnerships to improve nutrition education. Nutrition Education in the K-12 Curriculum: The Role of National Standards is a summary of the workshop's presentations and discussions prepared from the workshop transcript and slides. This summary presents recommendations made by individual speakers.

Nutrition education programs are important tools in the fight against obesity. Including cooking skill development as part of nutrition education programs could enhance the effectiveness of these programs in helping to prevent obesity. With this in mind, this project developed and implemented a combined nutrition and cooking curriculum based on MyPlate principles for 7th grade students in the Los Angeles Unified School District (LAUSD). This behavior-based intervention program aimed to provide students with the knowledge and skills required to make simple, nutritionally balanced meals in accordance with recommended dietary allowances (RDAs) of macro and micronutrients. Students were to receive five 1-hour nutrition classes and five 1-hour cooking classes over a 5-week period. The curriculum was delivered to one gifted 7th grade class in the medical magnet program at Christopher Columbus Middle School in Canoga Park, California. During the lessons, qualitative observations were noted to allow for changes to be made to the curriculum to improve learning outcomes. In addition, four dietetic experts evaluated the curriculum, and modifications were made based on their feedback. Providing adolescents with nutrition knowledge and cooking skills is one tool to help prevent childhood obesity.

Children and adolescents are considered the priority population for intervention strategies because 70% of obese adolescents become obese adults and it is difficult to reduce excessive weight once established (Dehghan, Akhtar-Danesh, & Merchant, 2005).
