Book excerpt: This dissertation includes studies on the effect of dietary CLA on the growth, fat accumulation and fatty acid status of chicken, and chicken meat quality as influenced by irradiation. Results showed that dietary CLA did not have significant effects on the growth rate and feed efficiency in chicken. And high levels of dietary CLA slightly reduced the whole body fat content. High ratio of dietary CLA can incorporate into chicken meat and egg yolk. Dietary CLA reduced the concentration of monounsaturated fatty acids. The concentration of polyunsaturated fatty acids, including arachidonic acid, linolenic acid and linolenic acid, also reduced as the dietary CLA level increased. However, when the dietary level of linolenic acid in diet was high, dietary CLA stimulated the synthesis of DHA and EPA, which might directly relate to the biological effects of CLA. High level of dietary CLA influenced the quality of meat, which was slightly harder and drier compared to the control meat. Dietary CLA significantly improved the oxidative stability of chicken meat. The reason for the improved oxidative and color stability of meat patties during storage should be due to the reduced unsaturated fatty acid content in chicken muscles, which improved lipid and color stability and reduced volatile production in both irradiated and nonirradiated meat during storage. Irradiation greatly increased the volatile production and induced a metal-like off-odor in chicken rolls, and dietary CLA had synergistic effect on this metal-like off-odor. Irradiation also increased the redness of chicken rolls. Consumers had a preference for the color of irradiated chicken rolls, while their reactions to the flavor of irradiated chicken rolls were quite negative.

Book excerpt: The current dietary recommendations for reducing the risk of cardiovascular diseases underline I) increasing MUFA intake (mainly 18:1n-9) at the expense of SFA intake (mainly 16:0) and II) increasing n-3 LC PUFA intake. Chicken egg and meat are natural sources of n-3 LC PUFA, and their consumption contributes to the intake of these semi-essential nutrients. Many efforts have been made to improve their fatty acid composition however, some aspects remain uncertain. The specific objectives of the present PhD thesis were [1] to study metabolism of fatty acids (accumulation and bioconversion efficiency) in broiler chickens and the impact of dietary fatty acids composition, and animal factors on the fatty acid metabolism, [2] to study the effect of animal factors together with diet on the fatty acid composition of muscles and organs in broiler chickens and [3] to study the interaction effects of dietary fatty acids on the egg yolk fatty acid composition. To fulfill these objectives, three experiments were carried out of which one trial was performed on broiler chicken and the two others on laying hens.

Book excerpt: Covering a variety of essential topics relating to commercial poultry nutrition and production—including feeding systems and poultry diets—this complete reference is ideal for professionals in the poultry-feed industries, veterinarians, nutritionists, and farm managers. Detailed and accessible, the guide analyzes commercial poultry production at a worldwide level and outlines the importance it holds for maintaining essential food supplies. With ingredient evaluations and diet formulations, the study's compressive models for feeding programs target a wide range of commercially prominent poultry, including laying hens, broiler chickens, turkeys, ducks, geese, and game birds, among others.

This book was released on 2018 with total page pages. Available in PDF, EPUB and Kindle. Book excerpt: With the modern diet that is high in total fats, high in omega-6 fatty acids (FA), and low in omega-3 FA, there is a high prevalence of metabolic and cardiovascular disease. Certain dietary acids are beneficial, while others may contribute to these disease processes. Eggs are an important part of the human diet as they are protein and nutrient dense and are a good source of vitamins and minerals. It is possible to manipulate the nutrients and composition of FA in the eggs by modifying the balance of the hens diets. This makes them a good target for experiments with fatty acids (FA). A diet high in omega-3 (n-3) FA has many beneficial effects including plasma lipid reduction, reduction in some types of cancer mortality, anti-inflammatory effects, antiarrhythmic effects, antithrombotic effects, antiatheromatous effects, and less severe manifestations of autoimmune diseases and inflammatory diseases. Due to the benefits of n-3 FA, it is important to understand the effects of oleic acid and linoleic acid (LA; C18:2n-6) on the deposition of n-3 FA in egg yolks. The goals of the experiment are to determine the effect of these FA on deposition of ALA and VLC n-3 FA in yolks. It is hypothesized that LA will have a negative impact on the deposition of ALA in yolks as they compete for elongase and desaturase enzymes. Additionally, it is expected that oleic acid will also have a negative effect on n-3 deposition in yolks.Fifty hens were randomly assigned to one of five dietary treatments that included a control, two levels of high oleic safflower oil (HOSO; 2% and 4%), and two levels of high linoleic safflower oil (HLSO; 2% or 4%). All diets contained 4% flaxseed oil (FLAX) to provide -linolenic acid (ALA; C18:3n-3) as a substrate for synthesis of the very long chain omega-3(VLC n-3) FA. Egg samples were collected on day 0 and day 28 of the experiment and were analyzed for yolk weights and FA composition. Samples of adipose and liver tissue were collected on day 28 for FA analysis.Increasing dietary oleic acid (18:1n-9), provided by HOSO, had a positive effect on deposition of oleic acid in the yolk. Increased dietary linoleic acid (LA; C18:3n-6), provided by HLSO, had a negative effect on oleic acid deposition. HOSO and HLSO also negatively affected the deposition of ALA and VLC n-3 FA in yolks. This supports previous experiments that showed dietary n-6 FA had a negative effect on deposition of n-3 FA in yolks as a result of competition for the elongase and desaturase enzymes. The diet that is most conducive to developing a high n-3 fatty acid egg is a diet with a high level of ALA and a low level of oleic and linoleic acid.

Book excerpt: In broiler chickens, hepatic lipid metabolism plays a significant role in whole body and muscle fatty acid (FA) incorporation. Flax seed is a rich source of [alpha]-linolenic acid and can be used to increase n-3 FA in poultry meat. Previous studies have shown that flax seed in combination with carbohydrase enzymes in broiler diets enhances long chain (LC) n-3 FA in hepatic tissue. Three experiments were conducted to evaluate the effect of flax seed and carbohydrase enzyme addition on production performance, total tract lipid digestibility, hepatic fatty acid composition, liver lipid class distribution and lipid metabolism in broiler chickens. In Experiment 1, broiler chicks were placed in individual cages and fed isocaloric, isonitrogenous corn-soy diets: Control, Flax (10% flax), and Flax+E (Flax+0.05% enzyme). The diets were fed for a period of 42 days. Total tract digestibility of lipids and FA were assessed from day 19 to 21 of growth. There was no effect of diet on production performance characteristics, including final body weight (BW) or yield of cut-up parts. Flax-based diets reduced total tract lipid digestibility (p
