The University of Missouri, at Columbia, mo., offered many facilities for dietary work. It has well-equipped laboratories, and the department Of chemistry was under the direction Of Professor Gibson, one Of the best authorities on dietary work in America. It was the original intention to make a somewhat extended series Of investigations, but the work which was begun by Professor Gibson was interrupted by his untimely death in October, 1895. Comments on these investigations made by Professor Atwater and Mr. Woods, and appended to Professor 'gibson's report herewith, indicate the value of the Missouri dietary investigations when taken in connection with those carried on elsewhere. Professor Gibson's report and the accompanying comments by the special agents Of this Department are respectfully submitted, with the recommendation that they be published as Bulletin no. 31 Of this Office.
