The same general decline was found upon breaking flue eggs. A study of eggs in retail stores disclosed a wide range of quality. This was doubtless a result of differences in age of eggs, temperature or other keeping conditions, and perhaps of variations traceable to hereditary conditions. S. Farm prices, averaging cents per dozen, were cents higher than in April, and the increase for tep grade eggs in metropolitan markets was even greater. The greater increase in the price of top-grade eggs is probably a result of warmer weather which reduces the proportion of high-quality eggs in the general run of eggs brought to market. The l.icente rise in farm eog prices from April to May is larger than usual. In two of the years since 1940, the May price has been lower than the April figure, and in only one other recent year, 1939, did the rise exceed 1 cent. In part the rise may have been affected by the one half of 1 percent decline in April egg production compared with March this year. The usual production trend from March to April has been an increase of about 5 percent in farm egg production. The relatively large diversion of eggs to hatcheries, suggested as a factor in the price increase, was more than offset by the relatively small volume of eggs put in storage. The term trade channels has been applied to this series of steps or succession of dealers involved. These trade - chan nels are not clear-cut or fixed; instead they are indefinite and always in the process of change. Perhaps the most important reason why trade channels are not clear cut is that every dealer must frequently go to other than his regular sources for eggs of some size or quality and must sell to other than his regular outlets because supply and demand conditions change so rapidly. Thus a distributor whose main business is in the sale of local eggs to a group of independent grocery stores, hotels, and restaurants gets the contract to supply a milk distributor with cartoned grade-aa eggs. Then comes a sudden hot spell that reduces quality. The result is that he cannot supply all the grade-aa eggs needed by his customers, in cluding particularly the milk distributor, without lowering the quality of the next lower quality, grade A, sold to other customers. Rather than lose favor with the latter, he buys some high-quality eggs through a broker, and from these he candles out the needed eggs of grade aa. He then has to find other outlets for the rest of the eggs, and thus makes a second change from his regular trade channels.
