Book excerpt: A year-round cookbook featuring one hundred soups and sides from veteran teacher and cookbook author Betty Rosbottom that makes soup the centerpiece of any meal. When Betty Rosbottom started a cooking school over twenty-five years ago, her soup classes were always the first to fill up. To her this made sense: soup is a universal staple, thanks to its versatility and ability to be prepared in seemingly endless variations. In this modern take on the perennially popular category, Rosbottom presents soups ranging from updated classics to those featuring fresh combinations of ingredients and garnishes, all guaranteed to inspire and delight. Drawing on her deep knowledge of cuisines around the world, Rosbottom presents more than one hundred recipes from far and near, from Onion Soup Gratinée, Vietnamese Shrimp and Noodle Soup, and Brodo with Asparagus and Gnocchi to closer-to-home favorites like New England Corn and Lobster Chowder and Louisiana Seafood Gumbo. Well-loved classics such as chicken noodle soup and gazpacho are elevated by respective additions of sautéed mushrooms and an icy cucumber granita. All recipes have been developed to provide aspects that home cooks love (ease of preparation, accessibility of ingredients, and the ability to double recipes). Also included are recipes for sandwiches, salads, and desserts, as well as sample menus that show readers how to make soup the start of endless memorable meals.

Over the years, a specific style evolved guided by the experiences and culinary interpretations of local pizza pioneers like Jimmy Massey, Romeo Sirij, Tommy Iacono, Joe Gatto, Cosmo Leonardo, Pat Orecchio, Reuben Cohen, Guido Casa and Richie DiPaolo. The years of experimentation and refinement culminated in Columbus being crowned the pizza capital of the USA in the 1990s. Author and founder of the city's first pizza tour Jim Ellison chronicles one of the city's favorite foods.

Book excerpt: Examining pathways from creative education to work, and preparation for these pathways within higher education programs, in the light of long standing labour debates, this book explores the creative launch experiences, destinations, and contributions of graduates emerging into an enormously diverse and heterogeneous creative workforce. Coming from university degree programs that tend to focus on the development of specialist creative disciplinary skills, graduates emerge into the diverse workforce with fairly narrow career identities. With contributions ranging from quantitative analyses of large longitudinal data sets to in-depth qualitative cases, the book aims to provide a range of studies that speak to the complexity found in creative careers. This book was originally published as a special issue of the Journal of Education and Work.

Weiner analyzes the ways in which understanding creativity is tied to broader contemporary patterns, including intellectual concerns with postmodernism; trends in the arts; the changing status of women; the power of the electronic media; multiculturalism; developments in psychology, science, and technology; and the dramatic political, economic, and social transformations of our age.

Available in PDF, EPUB and Kindle. Book excerpt: Mississippi Chapter of The Wildlife Society Outstanding Book Conservationist Fannye Cook (1889-1964) was the most widely known scientist in Mississippi and was nationally known as the go-to person for biological information or wildlife specimens from the state. This biography celebrates the environmentalist instrumental in the creation of the Mississippi Game and Fish Commission (now called the Mississippi Department of Wildlife, Fisheries, and Parks) and the Mississippi Museum of Natural Science. To accomplish this feat, Cook led an extensive grassroots effort to implement game laws and protect the state's environment. In 1926 she began traveling the state at her own expense, speaking at county fairs, schools, and clubs, and to county boards of supervisors on the status of wildlife populations and the need for management. Eventually she collected a diverse group of supporters from across the state. Due to these efforts, the legislature created the Mississippi Game and Fish Commission in 1932. Thanks to the formation of the Works Progress Administration in 1935, Cook received a WPA grant to conduct a comprehensive plant and animal survey of Mississippi. Under this program, eighteen museums were established within the state, and another one in Jackson, which served as the hub for public education and scientific research. Fannye Cook served as director of the Mississippi Museum of Natural Science until her retirement in 1958. During her tenure, she published many bulletins, pamphlets, scientific papers, and the extensive book Freshwater Fishes of Mississippi.
