Whilst at Glen Coe in the Scottish Highlands we were given a recipe for Haggis (which I have not bored you with in this book) along with other weird and wonderful recipes. We began to gather together our vast collection of homemade food recipes which have brought back so many happy and wonderful memories, as we are now both in our seventies. We were fondly nicknamed Mr. & Mrs. Posh while working at the Camping & Caravanning Club Site Sandringham in Norfolk, when all the staff received an invitation to look around Sandringham House, ours being in the name of Mr. & Mrs. Posh, the credit of which for our nickname came from Mother Hen (the lovely camper and crafter Mrs. Cooper) and Miss Bridget who ran the camp shop next to the club site. However, like everything you must plan, so do read the recipe book and choose what you would like to cook or not on your weekends away or your longer holidays. We have always carried a list of requirements for meals as you cannot carry 14 days' worth of food with you but with a list you can shop locally and cook up a storm of a meal in your mobile holiday home, as every tent, camper van, motor home, caravan is your space your holiday your escape from the daily routine. When we started out, I was desperately ill with asbestosis in both lungs with only a few years of expected life. I was the one who cooked all our meals while we were living in bricks & mortar, but when we took to the road it became great fun to share the cooking and we had moments of hysterical laughter when things went awry. Within one year of our life aboard my health did a turn round for the better, our happy carefree lifestyle had given us both a kick up the preverbal backside, and we began to take our health seriously and think what we were eating, for years we had poo pooed shopping at farm shops as an expensive gimmick, so a cheese toastie at lunch followed by a quick tea of something fried or out of a tin was ok, we were both overweight and soon got out of breath, me more so as I had COPD, no I was not a smoker but had lived in Birmingham during the 1960s and experienced the brown smog and with working for a manufacturer that made kilns for the bakery and pottery industries I inhaled asbestos which sat in my lungs until I reached my sixtieth year. But enough of my woes, the outdoor life and good simple cooking is our salvation, and now after fifteen years of being full timers we live in a beautiful cottage in Devon and thoroughly enjoy healthy cooking in our kitchen. We both hope you enjoy this recipe book as we had a lot of fun writing it.
