La ciencia y la tecnología reducen las limitaciones naturales, las modas dan ventaja a nuevas zonas y la política establece el marco en el que se comercializará. Los vinos nos cuentan un pasado más o menos reciente, el de los tiempos en que se plantaron sus viñas y el de la estación de sus uvas. Pero también pueden apuntarnos algo sobre el futuro, por sus posibilidades, sus avenidas comerciales. Y sabiendo que no existe el vino, sino infinidad de vinos. No esperéis encontrar en estas páginas reseñas de bodegas o de vinos, ni explicaciones sobre viticultura o enología. Para ello hay un gran número de libros a los que no sabría dar un valor añadido. Tampoco quiero aturullar con gran número de datos. He querido centrarme en asuntos precisos y expresar hechos y opiniones que tienen una consecuencia clara en los perfiles del vino. Mi visión es muy discutible, si no sería preocupante, pero espero que aporte algunos elementos de utilidad. No creo que tenga por qué ser correcta, pero sí afirmo que he hecho todos los esfuerzos para que sea informada. Critico lo que considero mejorable, callo lo que, aun no pareciéndome bueno, no tiene una vía de mejora que yo haya podido imaginar. Me ilusiona pensar que este libro pueda provocar algunas reflexiones en el lector, que en ocasiones sirva para acrecentar el conocimiento, y que otras veces anime la discusión, con un lenguaje que sea tan válido para los que se dedican al vino como para los que no. Me gusta soñar que haya algún lector al que no le guste el vino, pero que encuentre interés en lo que este libro cuenta. Y es que el buen vino es alimento para todos, hasta para los que no lo beben.
