Available in PDF, EPUB and Kindle. Book excerpt: In On Their Own Terms, Benjamin A. Elman offers a much-needed synthesis of early Chinese science during the Jesuit period (1600-1800) and the modern sciences as they evolved in China under Protestant influence (1840s-1900). By 1600 Europe was ahead of Asia in producing basic machines, such as clocks, levers, and pulleys, that would be necessary for the mechanization of agriculture and industry. In the seventeenth and eighteenth centuries, Elman shows, Europeans still sought from the Chinese their secrets of producing silk, fine textiles, and porcelain, as well as large-scale tea cultivation. Chinese literati borrowed in turn new algebraic notations of Hindu-Arabic origin, Tychonic cosmology, Euclidian geometry, and various computational advances. Since the middle of the nineteenth century, imperial reformers, early Republicans, Guomindang party cadres, and Chinese Communists have all prioritized science and technology. In this book, Elman gives a nuanced account of the ways in which native Chinese science evolved over four centuries, under the influence of both Jesuit and Protestant missionaries. In the end, he argues, the Chinese produced modern science on their own terms.

Book excerpt: This book focuses on the archaeological and historical research on the seaport heritage of galleon navigation in Asia-Pacific region. It reconstructs the Manila Galleons’ era of early maritime globalization, established and operated by Spanish navigators from the 16th to 19th centuries. The galleons sailed across the Pacific via the hub seaports and trade centers of Manila in the Philippines and Acapulco in Mexico, forming a prosperous sea route connecting eastern Asia and New Spain on the American continent for more than 250 years. This pioneering navigation of the pan-Pacific regions promoted early global maritime trade along the new Maritime Silk Road between the East and the West. Written by archaeologists and cultural historians from America, Mexico, Japan, the Philippines, Mainland China, Hong Kong and Taiwan, it presents the latest investigations and research on the galleon-affiliated seaports, including Acapulco and San Blas in Mexico, Guam, Manila in Philippines, Yuegang (Crescent Harbor), Xiamen (Amoy), Keelung and Macao in China, Nagasaki in Japan. This joint research sheds new light on the history of navigation and maritime trade between galleon-affiliated harbors; the origin, production, transport and trade of the galleon cargo; social cultural exchange along the new Maritime Silk Road in the pan-Pacific region; and the history of maritime globalization in last 500 years. It offers a new perspective on maritime archaeology and traces the different stages of the galleon trade and affiliated maritime history, including "Yuegang Outbound", "Manila Entrepotting" and "Bound for Acapulco", presenting a panoramagram of Spanish pan-Pacific trade and early maritime globalization.

Available in PDF, EPUB and Kindle. Book excerpt: From the prehistoric era to the present, food culture has helped to define civilizations. This reference surveys food culture and cooking from antiquity to the modern era, providing background information along with menus and recipes. Food culture has been central to world civilizations since prehistory. While early societies were limited in terms of their resources and cooking technology, methods of food preparation have flourished throughout history, with food central to social gatherings, celebrations, religious functions, and other aspects of daily life. This book surveys the history of cooking from the ancient world through the modern era. The first volume looks at the history of cooking from antiquity through the Early Modern era, while the second focuses on the modern world. Each volume includes a chronology, historical introduction, and topical chapters on foodstuffs, food preparation, eating habits, and other subjects. Sections on particular civilizations follow, with each section offering a historical overview, recipes, menus, primary source documents, and suggestions for further reading. The work closes with a selected, general bibliography of resources suitable for student research.

Book excerpt: Displaying a talent for combining aesthetic sensibility with scientific rigor, the author has given new life to something that once excited European passions: an original, non-academic art at the forefront of the 'new technology' of the time. For decades, aristocrats of the Old World and then American collectors (the latter at the end of the eighteenth and beginning of the nineteenth centuries) spent countless sums on the purchase of these works, which were worth a fortune. These wealthy collectors of curiosities of all types were also most certainly great dreamers seeking a worthy setting for their dreams. Unbeknownst to them, their endeavours had much greater scope, creating and nourishing the conditions for a rare encounter between two worlds: a golden age of atypical collaboration, a combined adventure between China and Europe.

Available in PDF, EPUB and Kindle. Book excerpt: Illuminating one thousand years of history, The Pilgrim Art explores the remarkable cultural influence of Chinese porcelain around the globe. Cobalt ore was shipped from Persia to China in the fourteenth century, where it was used to decorate porcelain for Muslims in Southeast Asia, India, Persia, and Iraq. Spanish galleons delivered porcelain to Peru and Mexico while aristocrats in Europe ordered tableware from Canton. The book tells the fascinating story of how porcelain became a vehicle for the transmission and assimilation of artistic symbols, themes, and designs across vast distances—from Japan and Java to Egypt and England. It not only illustrates how porcelain influenced local artistic traditions but also shows how it became deeply intertwined with religion, economics, politics, and social identity. Bringing together many strands of history in an engaging narrative studded with fascinating vignettes, this is a history of cross-cultural exchange focused on an exceptional commodity that illuminates the emergence of what is arguably the first genuinely global culture.

Available in PDF, EPUB and Kindle. Book excerpt: Despite its beauty, individuality and variety of design, the red or brown unglazed stoneware produced at Yixing in Jiangsu Province has received less attention than other branches of Chinese ceramic art. The Yixing potters have always specialized in the making of teapots, whose use became widespread during the Ming period as a result of the innovation of making tea from rolled leaves, rather than using it in the fine-ground, powdered from in which it had previously been supplied.
